Egg in a Boat

I have always known these as "One-eyed Jacks." It makes a heartier meal if you add a slice of cheese and then a second slice of bread for a grilled egg and cheese sandwich. Very delicious!

These were fantastic but I followed another recipe on how to cook them. After rolling, I lightly brushed with oil and baked them in the oven @425 for 20 minutes. Turned them over after 10 minutes. Same great taste without the added fat of frying.

Baked Pork Spring Rolls

Mock Chicken

This was my first time trying this technique and I thought it was great. After thawing, the tofu did have a sponge-like texture but tasted great after cooking. I used the tofu in the "Tofu 'fish' fillet sandwiches" recipe also on this site.

This soup was quick and easy to make but we thought it had a little too much liquid. Next time I'd use less water or maybe add a touch of tomato paste to thicken it up some.

Can't Get Enough Caramel Cookies!

My cookies had an excellent taste but turned out more like granola pieces. After reading the reviews, I realized what I did wrong. I should have baked a little longer to allow everything to melt together.

Pumpkin Dump Cake

Easy Chinese Corn Soup

My BF liked this soup a lot more than I did. I thought it just tasted a lot like creamed corn. I'd make it again because it's very quick, filling, and extremely inexpensive.

I made this as a non-alcoholic punch for a carry in and I think it really requires the rum. It was so tart that not many people seemed to like it. I will definitely make this again but WITH rum!

Seven Layer Dip I

This was a huge hit when I brought this as an appetizer to a party. I only used about half the amount of ground beef and prepared the dip in an 8x8 pan. I also heated the dip for a few minutes in the oven because I thought the cheese would be better melted. I served the dip with Fritos Scoops. Everyone enjoyed it!
