Cake Mix Cookies IV

Reviewed: Jan. 10, 2014
I used white cake mix with the pudding, I thought they were a little grainy, but the kids and hubs ate them all up and I can't beat the amount of time it took to make them. I gave them a light powder sugar glaze and they tasted pretty close to a sugar cookie with just a bit of a texture difference.

Blooming Onion and Dipping Sauce

Reviewed: Jan. 5, 2014
I used a apple slicer and corer to cut the onion, I put some butter knives around the onion to not cut all the way through then cut again to get the 16 cuts.

Clark Gable Pancakes

Reviewed: Nov. 30, 2013
Hands down the best pancake I have ever had, I misread the recipe and only put in 2 teaspoon of baking powder and they hold up well to making sausage pancake sandwiches for those mornings everyone is on the run.

Indian Sweet Potato and Lentil Soup

Reviewed: Nov. 28, 2013
I didn't have any spinach or masala and only ground red pepper and only 2 cloves of garlic (was a grocery week), so on a whim I added 1 teaspoon of cinnamon and about 1/2 teaspoon of curry. My 4 year old ate 3 bowls of it and my picky sister asked for the recipe, even my meat at every meal husband loved it, but I agree with other posters, its better if served with something a little crunchy like polenta croutons or some toasted baguette.

Werther's Funny Face Caramel Apples

Reviewed: Sep. 24, 2013
I did all the dipping part and the kids did the decorating. Super fun craft for the kids and the best part is that they can eat it later. Only difference is that I followed advice from another caramel apple recipe reviewer and used plastic forks instead of the Popsicle sticks and I used 8 small apples.

Old-Fashioned Pancakes

Reviewed: Sep. 22, 2013
Great basic recipe. I did think it was a bit heavy on the salt so I cut that back by half and added vanilla but so easy and a great texture.

Best Brownies

Reviewed: Jul. 23, 2013
These brownies are even better the next day, so I recommend making the night before, cooling completely then covering for the next day and don't overbake.

Cheese and Bacon Potato Rounds

Reviewed: Jan. 4, 2013
Very good as is, the second batch I brushed with oil instead of the butter as it crisped the potatoes up more. I recommend a good sharp cheese and a good bacon as there are not a lot of ingredients to compensate for ingredients with poor flavor, I used hickory smoked peppered thick slice bacon and a sharp cheddar.

Creamy Souper Rice

Reviewed: Dec. 12, 2012
Perfect side. I didn't have instant rice the second time I made it, so I used long grain white and I did 1 1/2 water to 1/2 cup of rice and cooked it normally then added the soup, cheese and 1/2 can of broth, stirred it in and cooked it until hot. Both ways are great.

Crepes

Reviewed: Nov. 19, 2012
Really good but thick. Like other comments mentioned to do, I added 1/4 cup more milk.

Apple Coffee Cake

Reviewed: Nov. 17, 2012
This was ok. The quality and flavors of the apples needs to be good in this recipe as there is no spices to fill out the flavor of the cake except in the topping, I do not recommend using Granny Smiths, a Fugi for Macintosh would be much better flavor wise. The texture was heavy and I had to add more liquid to the batter in order to be able to stir it.

Skiers' French Toast

Reviewed: Oct. 29, 2012
Ok, I took out the vanilla and added 1 TSP of cinnamon. Definitely take the crust off, it gets really chewy and use white bread, I tried whole wheat and its flavor was to much. Kids loved it, and I liked that this dish made french toast day much less messy at the table. Next time I am going to put crumbled cooked bacon between the layers, that way it is truly a one pan breakfast.

Spiced Apple Coffee Cake

Reviewed: Oct. 27, 2012
I loved this recipe, but it needs 3/4 cup of milk and the batter was still thick. I flipped the recipe and put 3 TBSP of melted butter into a 9x9 pan and sprinkled in 1/3 cup of brown sugar and 1 tsp of cinnamon then place in the sliced apples and place the batter over the top. After it bakes, flip the cake out of the pan so the cake is upside down. I mixed 2 cups of powdered sugar and 2 TBSP of milk and lightly drizzled the cake while still warm with the glaze.

Pecan Pie Bars I

Reviewed: Oct. 17, 2012
The only changes I made was the halve the recipe and I used a 9x13 since I didn't have a jelly roll pan and I lightly dusted it with a bit of powder sugar to make it pretty. Some tips. Use real butter for the filling part, this is one recipe that the flavor depends on it, grease the pan well, and while the pan is still warm loosen the filling from the edge of the pan, I waited 10 minutes, but the thickness of the filling will dictate this, and then you will not have an issue with sticking. Finally, these are rich so don't make the pieces too big when you cut them.

Quick Creamy Potato Soup

Reviewed: Oct. 15, 2012
Really like this recipe. Changes I made were to salt the water I cooked the potatoes in and then to completely drain off the water. I added the soups and added 1 and 1/2 can of milk instead of 2 and 1/2 cups to make a thicker soup. Next time I will make 1 can of the soup low sodium, but the potatoes really need to boil in the salted water, unless you make the soup the day before and serve it the next day or the potatoes will have no flavor. I made it with and without bacon and liked it both ways. Next time I will add a cup of chopped ham to try it out that way.

Baked Bacon Jalapeno Wraps

Reviewed: Oct. 8, 2012
Mmmm, good. I made them as is and like LaVerde recommended with the added cheese, both are 5 star. I dropped my jalapenos in hot water for 30 second and rinses them to precook them. I tried these on a hinged top grill like a George Forman, I don't recommend it, it oozed out everywhere, but a grill pan works great also thick cut bacon tastes great, but the slices do not wrap well and I recommend keeping with normal bacon slices. I dip them in warmed raspberry jam.

Homemade Flour Tortillas

Reviewed: Sep. 21, 2012
Great recipe. I switched out the lard for margarine and used a pastry cutter, but other then that I followed the rest of the recipe and they turned out great. I like to cook apples with a little water and cinnamon and sugar and place in the center of the warm tortilla and roll up for a quick weeknight desert to use up the leftovers as they taste best fresh.

Deer Jerky

Reviewed: Sep. 14, 2012
I have made this 8 times, each time to the recipe beside tripling it. I have never had anyone not like this jerky. An electric meat slicer makes quick work of the slicing and if you plan on making a lot of jerky, I recommend having one to save time as that is the most physically time consuming part of jerky making.

Corn Dogs

Reviewed: Sep. 8, 2012
These are really good, but not as sweet as the Foster Farm Corn dogs so if you are looking for sweeter ones, I would add a bit of honey to the batter. I skipped the skewer cause my frying pan was to small and no one seemed to notice or care. These do not take much to to make at all and are well worth the effort.

Meringue Cookies

Reviewed: Aug. 24, 2012
Made these and they make way more then 12 and making only 12 makes for huge gummy cookies. I recommend adding a flavor like almond rather then vanilla unless you plan to make them into cups to hold fresh fruit. I recommend parchment paper.
