So good!!! I finally made a roast and it wasn't dry or overcooked! 1 hour was just right. I did do a wet marinade of dijon mustard and red wine and soy sauce for 4 hours prior, then patted dry and added the dry rub and let that sit for the 30 mins at room temperature. A little spicy, but I upped the pepper and spices as I like it that way.
