To Die For Blueberry Muffins

Really yummy muffins. Great for breakfast on the go. I also made strawberry banana with the same recipe. I find that with a regular baking pan I consistently end up with 11 muffins instead of a full 12. So to fix this, I put 2 cups of flour and 1 cup of sugar and 1/3 extra skim milk for easier scooping into the cups.

Herb Rubbed Sirloin Tip Roast

So good!!! I finally made a roast and it wasn't dry or overcooked! 1 hour was just right. I did do a wet marinade of dijon mustard and red wine and soy sauce for 4 hours prior, then patted dry and added the dry rub and let that sit for the 30 mins at room temperature. A little spicy, but I upped the pepper and spices as I like it that way.

Linda's Lasagna

This is my favorite lasagna. I've tried other people's homemade lasagne and this stays my favorite. You can add spinach, or different cheeses or stay classic. I usually substitute the "sauce" with Catelli's Garden Select pasta sauce (all Real ingredients) and extra garlic it up for my husband.

Buttercream Icing

This makes a really easy icing. I also followed lonarific's suggestion and used only butter cause I don't keep shortening. But you need to watch how much milk you add. I only have skim milk which is more watery than 2%. So I had to add an extra cup of icing sugar (bringing me up to 3 1/2) to keep a thick and creamy consistency and an extra teaspoon of flavoring to trim down the butter taste. Next time I'll try with half/half cream and see how the texture and flavor changes.
