Crispy Rosemary Chicken and Fries

This was delicious! I pretty much followed the recipe but did add baby carrots to make it one stop shopping. My only other differences was I used boneless skinless thighs (because that's what my husband happened to buy) and doubled the spices. Everyone in the family ate it and that's not easy to say when you have an 11 yr old and an 8 yr old.

Classic Waffles

These were delicious! I followed some tips and did a little more milk, half the salt, less baking powder and slightly more sugar. I think next time I might half the baking powder to see if that works as well. Made these for the first time Easter morning and all 6 eaters gave thumbs up!

Bacon Wrapped Pesto Chicken

This was a great recipe and easy to modify for your own tastes. I added some shredded mozzarella cheese over the pesto sauce to give it a little extra something and did not use any oil - it just wasn't necessary. I put the rolls up on a rack on a pan and cooked at 400 for 30 minutes then flipped them over and broiled for another 5 minutes to cook the bacon on the other side. Next time I would only cook for 25 minutes before broiling though. All in all, a great recipe that my husband and kids enjoyed too!

Sausage Pasta

This was really good! Like others suggested, I used fresh spinach and added it in at the end. I also under cooked the pasta a bit so it could sit in with the liquid at the end and absorb some. I adjusted my portions a bit based on what we had but the only thing I changed that wasn't on here was added some half & half to the sauce and left off the parmesan cheese (kids added it to theirs when eating). Definitely a keeper!

Oven Fried Chicken III

This was delicious! We've been trying to find an alternative to classic fried chicken and this was it! My husband called it the winner and my kids liked it too. I took the advice of others and mix 1/2 cup of mayo with 1/3 c. of half & half (but milk would work too) and about 2-3 tablespoons of ranch dressing. For the breading I used homemade bread crumbs and added in a garlic herb mixture and some sea salt. Absolutely amazing! We will definitely be making this again.

Ginger Glazed Mahi Mahi

This was delicious! I replaced the olive oil with toasted sesame oil to add a bit more flavor and cooked it in the oven at 400 for about 20 minutes (but this would depend on the size of your filets). Hit with husband and one of my two children which is a win in my book!

Blueberry Scones

This was my first attempt at making scones and I thought this was a wonderful recipe! Easy to put together and tasted delicious. Yes, the batter was really moist and cutting it wasn't so easy but the end product was perfect so I don't really mind what the shape is. My son and husband both loved them! Definitely a keeper. Can't wait to try with raspberries and white chocolate.

Kabob Marinade

This was one of three marinade recipes we used for our recent kabob night (the others being Yummy Honey Chicken Kabobs and Marinated Grilled Shrimp) and it did not disappoint! It was a nice flavor and kept the beef moist and flavorful. We made it exactly as is and it made a ton! We should have added more beef!

Amy's Cilantro Cream Sauce

Made this completely as is and thought it was really good! Had it two different ways in one day too. At a BBQ in the afternoon, served it with whole grain tostito chips and later on used it as sauce for grilled chicken. Both delicious!

White Chocolate Chip Oatmeal Cookies

These are delicious! I did less than a cup of sugar for both brown and white and probably could have even done less - 3/4 cup each would be more than enough. I also did 1 cup of whole wheat pastry flour and 2 of white and would never have known. Next time I'll do 2 whole wheat and 1 white.

Annie's Fruit Salsa and Cinnamon Chips

This was phenomenal!! I got a ton of compliments on it. I took the advice of so many other commenters and did not add any sugar at all. I'm glad I didn't! It would have been way too sweet otherwise. I also forgot to get raspberries so my mix ended up being 1 lb. strawberries, 2 kiwis, 1 fuji apple, 1 peach and a couple spoonfuls of orange marmalade. I think about 10-12 fajitas was more than enough though. All the salsa was gone before the chips were.

Sopapilla Cheesecake Pie

A friend of mine brought this to a party and it was amazing! Not a person at the party didn't like it - grown ups and kids. My 8 year odl son liked it so much I found him on the computer the next day trying to Google Mexican desserts so he could find it! Good thing I already knew where I could. :)

Buttermilk Pancakes II

These truly are delicious! I cut the recipe down to 4 servings and ended up with 8 good sized pancakes which was perfect. I was concerned about the lumps in the batter at first but once cooked it was no issue at all. Try adding Grandma's Buttermilk Corn Bread (from here) to use up more of that buttermilk and have breakfast for dinner. That's what we did and the kids loved it all.

Kielbasa with Pasta

This was a great starting off point recipe. I gave it 4 stars though instead of 5 because I just wung it a little bit with what I had on hand. I used just some regular diced tomatoes since I had a tomato to use up, and used less onion and green pepper since again, I only used what I had. My son and daughter loved it, which doesn't always happen!

Peanut Butter Sheet Cake

The cake part of this dessert absolutely deserved 5 stars, it's delicious! We did use slightly more peanut butter in the batter and added some mini chocolate chips in. With the warmth of the batter, the chips melted right in and added a great flavor! I gave the recipe 4 stars though because we did not like the flavor of the icing at all. It didn't add much to the cake at all. I will say though that if you do decide to use this icing recipe, you will definitely need to double it since I couldn't get it to cover the whole thing. I will also say that you should wait until the cake is almost finished to start the icing. I had to put it back on the warm stove to keep it melted enough to put on the cake.
