Reformed professional chef :) who just got a lil burnt out on the hours.
I love pursuing the perfect flavor profile of any dish. I'm a modifier and seeker of a healthier, tastier version.
My favorite things to cook
Can you have a "favorite" thing to cook? I haven't thought about that.
I like to can and preserve fresh things as they are in season to enjoy throughout the year. I'm always looking for new ideas.
My favorite family cooking traditions
I come from a long tradition of great home cooks. Getting a "recipe" is tough, in my family. Good cooking has been based on need and availability of product. Preservation of home grown product is one of their greatest traditions. Like my mom said to me..'one of my best food memories is opening a jar of home-canned summer peaches in the middle of winter'.
Recapturing that whole freshness interests me, particularly in the additive world in which we live. I'm always on the lookout for great, fresh things to preserve in whole for later.
My cooking triumphs
A few, none worth mentioning.
My cooking tragedies
Many. If you don't try, you never enjoy success.
