Eclair Cake

Very easy, makes a lot for a party or group. I just made it today for New Years. I used cheesecake flavored pudding so we will see how that goes.

Raspberry and Almond Shortbread Thumbprints

This is a decent recipe. I also had some spreading of jelly but my oven is terrible (in a rental). I cooked them at a lower temp and just remembered to take them out BEFORE browning. This recipe doesn't have eggs so there is no worry about getting sick if they are a bit under done.

Fudgy Brownies I

I made this last night and I appreciate the fact I could use ingredients I had around the house. I try to cook with homemade items and avoid processed mixes as much as possible. I used oil and added some extra chocolate chips to the batter. I felt these were a bit dry and not very fudge like. It's not a bad recipe and my husband and son liked them.

I also doctor this up a bit but I do think the basic recipe is quite good. I would not be without a container of cocoa powder in the house since finding these sorts of recipes.

Orange Muffins

Nice recipe but not very orange tasting. I added some real orange squeezed juice to the batter and still...sigh. Anyhow, it made a good tasting yellow muffin. I don't know if I'd make them again, but it was a change from chocolate.

Devil's Food Peanut Butter Chip Cookies

Excellent cookies. What a wonderful idea, using a cake mix. I have been baking cookies and cakes for years but never thought of this. Anyhow, I made them using chocolate chips and I had to cook them for about 15 minutes (we like our cookies BIG). My four year old son and I loved them. Now we are waiting to see what the rest of the family thinks. Bravo. A keeper for sure!

Zucchini and Rice Casserole

Finding quick and non-bizarre vegetarian recipes is very difficult but this one is very good. Not too hard, and my husband likes zucchini a lot so that helps. I like the fact it does not require one or two obscure ingredients (like many veggie recipes) that you will never use again.

Betz's Good Sugar Cookies

This sugar cookie dough is not the worst I've worked with despite many of the poor reviews. I made it up 2 days before I was going to use it and put it in a covered bowl in the fridge. The dough is very, very soft and hard to work with. I simply used a lot of flour on the cutting board, grabbed a hand full of dough, and kneaded some extra into each handful. I did not use a rolling pin, but flattened it with my hands. Use plenty of spare flour and your cookies will come out fine. Also, use a simple outline cutter, not one with a lot of detail. The dough WILL stick to each part. A seasoned baker will have no problem with this dough. Sugar cookies from scratch are NOT easy to make. Also, you may want to ice these or put on some sprinkles.

Easy Vegetable Pot Pie

My husband is a vegetarian and we find it hard to get him filling meals like you can buy in England. I made this recipe modifying the ingredients (I used cream of mushroom soup and mixed veg and homemade crusts). He loved it. I would make it again using various cream of whatever vegetable soup mixes. Great!

Soft Pretzels I

Maybe it was me, but these were not very good at all. I am used to working with dough, but they were soggy and floated all around the pot and broke. I would not make boiled pretzels again!

A Number One Egg Bread

This bread is delicious and tastes like a very rich challah bread. I made it today (day before Easter) and it was enough for 2 medium loaves. This is a very rich recipe, not at all for the dieter, but something to perk up up a holiday meal. The dough was very sticky so added flour at the mixing stage a little at a time. You may need to add more based on stickiness. It is very good tasting!
