Quinoa and Black Beans

Thank you for sharing such a versatile recipe. Ready for anyone's preferences. I added 1 shredded zucchini, a drained can of diced green chiles, and doubled the spices to serve it cold. It's better the next day, so make it ahead. When I subbed couscous, it just wasn't as good. So get the quinoa in bulk.

Way easy to make. I loved the sandy part, felt inspired to make sand castles out of it. A bit dry, but if you slather on Earth balance and apple butter - who cares?

Sweet Potato, Carrot, Apple, and Red Lentil Soup

I was skeptical cuz' I'm not a sweet potato fan. OMG! This soup was amazing. I made it and let it sit for 2 days in the fridge. Reheated on the stove and thinned it out with more broth. My girlfriends went back for seconds. I left the skin on the apple and used Earth balance instead of butter.

Thai Noodle Salad

Thank you! This is very similar to a recipe in the Neiman Marcus cookbook (that I couldn't find when I needed it!). I omitted the toasted sesame seeds and just eyeballed the dressing ingredients. Next time, I'll add more cabbage cuz I love it!

Wow tasty! Only took 3 min. Of shaking to pop. Left pot on the stove for 2 more min. And it caramelized (fancy for burned). Listen to the popping stop and rmove immediately!

Cranberry Sauce

Great starter. I did this: 1/2 c apple juice, 1/4c triple sec, 1/4 c brown sug, 1/2 c white sug, 1 chopped granny smith apple, 1/2 c currants, cran, and simmered for 10 min. Nummy! My 5 year old asked to lick the pot. Can't wait to hear the rest of my family's comments.

only used 1/2 C Vegenaise, and subbed 1/4 cup pepitas, 1/2 C dried cranberries, one whole bunch of sliced green onions. And no bacon. MOPS group loved it!

Peanut Butter and Pumpkin Dog Treats

My rescued princess labrador who won't eat anything gobbled these up. We increased the pumpkin to 1 cup, added 1/2 cup oats, and increased peanut butter to 3T. Made small shapes. Baked 15 minutes and let cool for 5 minutes on the baking sheet. So easy my 5 year old LOVED making these. Very forgiving recipe.

Hasty Chocolate Pudding

made it last night with 1 change: used 1 cup half and half and 1 cup 1% milk. Rich, chocolatey. Made it today with 1/4 cup white sugar and 1/4 cup brown sugar, reduced cocoa to 1/4 cup, 1/2 cup half and half and 1 1/2 cup 1% milk. Great after school snack in 1/2 cup servings. I will never buy a box of pudding mix again. MICROWAVED - wow!

Good Old Fashioned Pancakes

OMG! This is an incredible recipe. I've ditched all my others. Holds blueberries when you cook the batter. Just added wheat germ to make myself feel better about eating such decadent goodness. I even triple the recipe and freeze the pancakes to toast later. UPDATE: I made a bag of just the dry ingredients to take on vacation. Whipped up lovely pancakes there! Great memories in Hawaii.
