Buffalo Wontons

I made these tonight and the boyfriend and i loved them. i made them with half chicken and half tiny diced carrots, and used franks red hot sauce instead of pepper sauce and butter and they were SO GOOD. fortunately, the recipe made about a million of them so we have extras to freeze.

Tortellini Chowder

tonight, as i was clearing off the table and getting it ready for dinner, i turned around, and the fella was eating the soup out of the pot on the stove with the ladle. we love this recipe. we usually follow it exactly, but tonight, i didn't feel like dealing with the jalapeno or chile peppers so i just added a little jalapeno tobasco. it still tasted amazing. i'll probably skip those two ingredients from now on. either way, i have no idea why this isn't a more popular recipe. this chowder is amazing. oh, and i'd rather die than eat cilantro, so that was out, too.

Leftover Squash Muffins

This recipe is awesome! I tripled it because I had just baked a whole squash, and I did make a couple changes. first, once my squash was done cooking, I put it in the blender, skin on, with the milk until it was smooth. I'm lazy and didn't feel like mashing it, and it worked perfectly. I also used half whole wheat flour and added extra cinnamon and a couple other spices because my eleven month old refuses to eat anything that doesn't have a ton of flavor. I also HATE cleaning my muffin pan, so i just poured this batter in to every baking dish I had in the house, so I ended up with cakes and bread loaves instead of muffins. It worked out wonderfully. Most squash bread recipes I've made tend to turn out a lot denser than I like, but this one is perfect- more importantly, the baby loves it!

Healthy Banana Cookies

this is an awesome base recipe. i had been looking for something i could make for my one year old for breakfast that's quick, easy, and healthy, and this works perfectly. I didn't add the oil, i just threw in an extra banana, and i didn't have dates, so i just chopped some spinach and carrots and mixed that in as well. i thought it would be pretty plain, so i also added some cinnamon, nutmeg, cloves, and a little allspice, and it turned in to a super healthy breakfast cookie- you can't even tell the vegetables are hidden in there.
