Creamy Wild Rice Chicken Casserole

Super yummy! Doubled the recipe as I wanted leftovers. My hubby and daughter were very happy. My daughter doesn't care for mushrooms so I made a mini one for her without them. I took advice from another reviewer and mixed the cracker crumbs and melted butter together. Great tip! Ritz crackers would be good too.

Amazingly Easy Irish Soda Bread

I made this for the first time this weekend for two St. Patrick Day dinners. I made 3 loaves (one at a time) and they all turned out so delicious. I made one with walnuts and craisins, and two plain. Each type got rave reviews from our neighbors and my family. I did add a bit more buttermilk to the dough as it was a bit dry and was falling apart as I kneaded. This could have been the result of my measurements of flour since my 5 year old was assisting me. I loved the ease of using one bowl! The last one I baked at 350 degrees for a little longer because my oven tends to run hot. It was probably the best out of the three in terms of texture on the outside and in. I just made myself some toast with the leftovers...yum!

Grandmother's Buttermilk Cornbread

Excellent! It's been years since I've actually made homemade cornbread...this recipe is a winner. Paired it with chili. Try it, you won't be disappointed. I only baked mine 30 minutes so watch your time carefully.

Debdoozie's Blue Ribbon Chili

First time making chili, and it turned out so good! Both my husband and 3 year old daughter were saying "mmmm" as they ate it. I let it simmer about 2 hours and made Grandma's Buttermilk Cornbread from this site also. Topped the chili with cheese and sour cream. Hot sauce and onions on the side. So easy, so delicious!

Italian Breaded Pork Chops

Very delicious. I used Panko bread crumbs because that's what I had on hand. I also dipped in flour before the egg. Can't wait to make these again!

Slow Cooker Buffalo Chicken Sandwiches

Yummy with some blue cheese dressing and chopped lettuce. Next time I might mellow this out a bit and use some tomato sauce too. It was a bit tangy. I used Frank's Original Hot Sauce. I may try Frank's Wing Sauce if I can find it next time. Definitely yummy and would be great for a potluck.

Different Chicken Cordon Bleu

Very good variation on a recipe I've used for years. Great for leftovers too. Next time I make this I will adjust it because it was very salty...and I love salt! I think I might just use Panko bread crumbs instead of the stuffing mix and serve over rice.

Microwave Oven Peanut Brittle

My grandmother made microwave peanut brittle for years. This was my first time making it and it turned out great. I watched each batch carefully to make sure it didn't burn. Like other reviewers, I added the peanuts (I also made cashew brittle!) after about 4 minutes. Then added the butter and vanilla. Since microwaves do vary so much, my suggestion is to watch it carefully. Once it starts to get golden, then add the nuts, etc. My husband liked it so much that I ended up having to give smaller portions out to my neighbors. Next time I'll make more or hide it!
