Roasted Brussels Sprouts
I have never been a fan of brussel sprouts, my mother ruined them for me as a child by making a monthly dinner of liver and onions and boiled brussel sprouts for my father, who clearly must have had his taste buds ruined in a tragic accident before I was born. Anyway, this dish has made me a convert. I followed the recipe and threw in some sliced onions to the mix just to see what happens. Oh my goodness, those crispy carmalized bits were so very tasty. Brussel sprouts have once again earned a place at my table, though I don't think liver and onions ever will.

Blueberry Oat Muffins
I have made this recipe countless times. My new favorite alteration is to swap out the vegetable oil for unrefined coconut oil. Yum, better tasting and better for you. They fill up a big 6 muffin cup tin quite nicely. I make them so often that I have a container filled with cinnamon/sugar ready to go at a moment's notice.

Emily's Famous Hash Browns
These were absolutely delicious. I only had one potato on hand and it still made plenty for four. I didn't use nearly as much oil just a couple of tablespoons and they turned out just fine. Will definitely make again. Thanks for the great recipe.
