Best Spanish Rice

Sautéed about 1/4 C. minced onion, 3 green onions and 1 hefty garlic clove then added the rice to sautee. Used 1 can of mild Rotel (15 oz.) and 2 C. chicken stock with 1.5 cups of white Jasmine rice, cooking 22 minutes then allowing to set for 5 with the lid on. The end result was fluffy instead of gummy and very flavorful. Next time I'll add 1/2 tsp. cumin and maybe a dash of chili powder, but the overall flavor was great and, importantly, the texture was SO MUCH BETTER than any packaged rice of ANY brand (and believe me, we've tried them all). I served this to 4 adults with some leftovers -- not a ton. I'd 1.5 the recipe if serving for 6.

Oregon Salmon Patties

Added a celery stalk, clove of garlic, some dried dill, 1/4 tsp. kosher salt and white pepper. I used two small (6 oz.-ish) cans of drained salmon and didn't use the broth. I used 1/2 a sleeve of Ritz crackers that I added to the mixture, NOT reserving any for dredging. I baked them for 9 min. per side at 375, thanks to other reviewers. My family LOVED them and I'll happily make them again.

Seven Minute Frosting I

I made this on a very rainy day and, despite the weather, it turned out (mostly) fine. It took about 10 minutes to beat it into submission and once I realized it wasn't going to get any more stiff-peak-ish I forged ahead with it. It was a bit "relaxed" for frosting my cake but I'd run out of time and had to proceed with my slumpy frosting. It looked homey and was, in my opinion, tooth-achingly sweet. It was a pretty frosting, it worked for my cake, so I'm giving it a 3 star, but I won't make it again. The texture was just too granular for my liking and unfortunately, that was the consensus of the others eating the cake.

Breadless Stuffing

I so badly wanted this to be delicious -- or even average. Sadly, it was just not good. I used less sage, but other than that followed the recipe pretty closely and was disappointed.

Turkey Goulash

Good basic recipe but way too much pasta to be a goulash, I think. I used a full 15 oz. can of tomato sauce, a full 28 oz. can of stewed, diced tomatoes and less pasta than called for (a 13oz. box of higher fiber rotini pasta) and it was still too much. I futzed around with additional garlic, some dried oregano, more basil, no sugar but next time will try adding an extra can of tomato sauce, frozen corn, olives, etc. It's a great way to stretch a pound of ground turkey. I'll make it again.

Champagne Punch III

I'm not a big fan of overly sweet drinks so this was perfect. I skipped the bottle of white wine (I made this for an office party and didn't want people to get hootched unexpectedly -- sometimes punches pack a wollop!) and used club soda. I floated frozen cranberries on top (and a sprig of mint would've been pretty if I'd had one). I'll absolutely make this again.

Brown Sugar Instant Oatmeal Muffins

Very average, very heavy, gummy muffins. Despite adding more sugar and vanilla these were disappointing. I won't make them again and will likely throw the remaining 6 muffins away. I'll look for some other recipe to use up extra packages of instant oatmeal -- this won't cut it.
