About this Cook
I've grown up in the food industry. I started as a bus boy, and worked my way to be a waiter for 8 years. I enjoyed working for restaurants with different types of cuisine, such as Greek, Italian, Steak House and BBQ. I enjoy trying new places to eat, and look for truly authentic restaurants that specialize in a particular type of cuisine. Sometime, I like to feel like I left the country on vacation, while I'm out for dinner.
My favorite things to cook
Definitely BBQ. I enjoy many other types of cuisine as well, especially savory dishes. My most favorite type of dishes are spicy dishes.
My favorite family cooking traditions
I grew up eating French food (from my mother's side) and spicy Indian food (from my father's side). Some of my favorite dishes that my family makes are: Tandoori Chicken, Crepes, and Pork Roast. My family does not stick to a set traditions as I come from a multi-cultural family.
My cooking triumphs
I am known for my ribs, Risotto, Gorgonzola Pesto Cream Sauce Gnocchi, meat balls, Jambalaya...
My cooking tragedies
I rather not mention ;) Out of sight, out of mind... you live and you learn!

Andy's Spicy Green Chile Pork
I really enjoyed this one for its simplicity. It's quite mild so I like to kick it up a notch by adding a paste of dried dark hot chillies such as pasilla, chipotle and/or ancho etc. and some water at the same time as the salsa. I also to like to make the bed of onions but I personally like to add more heat again with some chopped hatch chillies (wide hot green peppers) on top. It's doesn't add much more heat but lots of flavour. This is a great base recipe for many variations to suit your palate.

Chef John's Spanish Garlic Soup (Sopa de Ajo)
What a great recipe! I liked to use a little less paprika not to overpower the garlic flavour. The garlic flavour is subtle, kind of like onions in a French onion soup. This brought me right back to this Spanish restaurant I went with my family a long time ago. I'm happy to have found this little gem, it really brings me back. Thanks Chef John! Love all your recipes, you have great taste.
