Stuffed Portobello Mushroom Caps

This was good, but I agree with other reviewer. It was a little dry. I didn't follow the recipe exactly. Of course we modify to what we have on hand right? :) First off I took the stems out and cleaned the mushroom "gills". I then salted the mushroom caps and put on a baking sheet to precook at 350 deg. I chopped the stems and sautéed the stems with some garlic and small shrimp just for a minute to incorporate the garlic. I put the shrimp mix into a bowl with my imitation crab, some parmesan cheese and panko bread crumbs. I added a Tbspn of mayo and some peppered gouda cheese (had no mozzarella). After the mushrooms were in oven for about 10 mins I took them out and dryed them off as they had sweat out a lot of moisture. I then took my stuffing and mounded it into the caps. I topped the mound with some more panko and sprinkled with olive oil. I baked for about 30 mins and finished with a quick broil to brown the top. Next time I will use Mozzarella and more mayo for moisture. Overall very good.

Chicken Parmigiana

Very good recipe, although I made a few changes. I bought boneless chicken breasts. I cleaned the fat, etc. I butterflied the breasts in half. Then i pounded them between a sheet of plastic until they are about 1/3" thick. Then salt, pepper. Dip in egg, then Panko bread crumbs. Bake 30 mins, turn over, bake another 10 (I think this is about 10 mins too long) Once they were slightly brown, I followed the directions of sauce, cheese, then bake. It was one of the best chick parm i have ever had. Raves from my dinner guests. I meant to take a pic but no one could wait to eat after smelling my dinner. I served with a side of zuchinni sauteed in onion and garlic, and garlic bread.

Kim's Macaroni Salad

this was good. I thought the jalapeno would be dominant heat so I added only one jalapeno and an anaheim chili. I also added some eggs. (I had leftover deviled eggs in the fridge so i chopped and threw it in) It was real good. The jalapeno is barely noticable. I wish I had of followed the directions. Even my son commented about the great taste of the new additon (jalapenos) to my mac salad recipe. I cant wait to try it tomorrow once all the flavors marry together.

Daddy Mack's Oysters

I made a version of this for a tailgate party at a football game. I didnt add the Sriracha sauce merely because I was trying to make the butter with ingredients I had on hand. I also used red onion instead of shallot. It was awesome and definitely a hit. Next time I will make this with the chili of some kind, and maybe a pinch of grated Havarti on top of the oyster. I will make again.

After-Thanksgiving Turkey Soup

I made this today (day after Thanksgiving). It was awesome. I altered the recipe a bit though. I used only 2 onions, about 7 stalks of celery, and a bag of baby carrots (cut in half). After sauteing the veggies, I followed the directions although I did subsitute whole milk instead of Half/Half. Added my remaining turkey stock and some chicken stock. At this time I added the turkey and seasonings along with 3 zuchinni squash (this put it over the top in taste!!) and let it simmer for 30 mins. It was so yummy!! I would make this again.

Broccoli with Garlic Butter and Cashews

This is good but needed something to make it great. When making the sauce I added about 1 Tablespoon more butter and when it was simmering I put in 1lb. of baby sliced portobella mushrooms. Once the mushrooms were done (about 6-7 mins) I put the mushrooms and sauce over the steamed broccoli (steamed in the microwave in a covered dish in about 1/2" of water) and added the chopped cashews. It was a hit at the pot luck!
