Grandma's Chicken Chardon

Used a whole stick of butter and fresh lemon, at least 2 tblsp. Fresh garlic in the melting butter, and herbed breadcrumbs. Also fresh grated parmesan! This is fabulous!

Sweet Fried Summer Squash

The way most of the reviews on here show, is a whole new recipe. I think that changing anything would be to use brown sugar instead of white. Otherwise, omitting sugar of any kind and adding other ingredients is a whole new recipe. Just saying!

Orange Herb Roasted Chicken

Totally changed it up. Made a basting sauce with brown sugar, juice of two oranges, rosemary, garlic, ginger, salt, pepper, balsamic crème and 2 tblsp olive oil. I let this simmer a bit. Cut my chicken in half. GOt the grill ready. Salt & peppered the chicken, put it on the grill, and part way thru cooking I started basting with the sauce. Fabulous!

Orange Marinated Pork Tenderloin

Lime Chicken Soft Tacos

Rather than cube the chicken I chunked it in various sized pieces. Marinated it in 1/3 of the marinade. Cooked the chicken, added the marinade and instead of soft taco's I made two large open-faced quesadilla's and melted the cheese on top, than topped with lettuce and tomato and avocado! Awesome!

Sesame Seared Tuna

I didn't waste time trying to find a sweet wine. I used some Merlot. It was perfect! Followed the directions except I marinated the tuna steaks for 2 hours! Fabulous!

Corn Fritters

Orange Chicken with Asparagus

Ginger Orange Brussels Sprouts

Didn't have orange juice, so I used the juice of an orange. No pecans, so I waited and put toasted almond slices on top to serve. Also, I quartered the brussel sprouts rather than have them all chopped up. As they cooked they separated wonderfully! No cranberries, so I added golden raisins with the ginger! Perfectly Perfect!

Spinach Stuffed Chicken Breasts

Fabulous recipe. I used fresh spinach, cheddar cheese, sour cream, fresh chopped garlic, instead of what they wanted. Cooked perfectly. The extra stuffing was put into mushrooms and they were fabulous!

Wine and Garlic Pork (Portuguese Vina Dosh)

I had a small bone in pork shoulder. I marinated it for 3 days. Then cut the bone out and marinated the cut up pork for a few more hours. Followed the recipe the rest of the way and served it with herbed egg noodles.

Spiced Butternut Squash Soup

Instead of chicken broth, I used fresh duck broth. Added Fresh Rosemary and a bit more garlic than they wanted! I used a little bit of smoked paprika also, along with fresh parmesan cheese! Served it with garlic croutons and of course the dollop of sour cream! I made this with left over butternut squash, turnip, parsnip and garlic that I had previously roasted!

Spinach Brownies

Used only half the butter and sautéed garlic in this while I melted it. Didn't have spinach, but I used brussel sprouts and chopped them up. Incredibly awesome!

Cauliflower Hamburger Casserole

I pan seared the veggies with garlic slightly....used baby carrots, cauliflower & fresh garlic. Crushed garlic croutons and put that in the milk/egg mixture instead of bread crumbs. Added more fresh garlic & chopped red pepper to the hamburg.....parmesana regiana was shredded on top the last 15 minutes.....awesome flavors!

No Fuss Chicken

I used 1/2 the mayo and Emeril's Horseradish Mustard! Didn't have cornflakes so I used honey nut clusters mixed with a bit of potato flakes. Added chopped fresh garlic to the sauce because I love garlic. This is awesome!

Sausage, Peppers and Spaghetti Squash

I used local sweet sausage from Kulick's Market. I only used 1/4 cup of fennel seeds that I roasted and added them to the tomato. Warmed up the squash and in another fry pan I cooked the peppers, onions, mushrooms and extra fresh garlic chopped! Added the sausage to this that I had partially cooked. Then served this on top of the spaghetti squash!

Mini Beef Wellingtons with Red Wine Sauce

Totally changed this up. I used leftover prime rib that was rare. sliced it up and added it to partially cooked mushrooms & diced summer squash. Made a rue and added the meat and veggies to it. In my puff pastry I spread each side with herbed cream cheese that also had garlic slivers in it. Baked this and WOW~

Chef John's Perfect Prime Rib

This is a perfect recipe. My roast was almost 8# bone in....I stuck slivers of garlic in the top, rubbed it with soft butter, crushed garlic & rosemary....then topped that with kosher salt! I will never cook this any other way!

Pork Marsala

Amazing! I partially cooked the pork, then used the pan to make the sauce. Put the chops in an oven safe dish and poured the sauce over it and booked it in the oven on 350 for 10 minutes....just to rewarm! Amazing sauce!
