Spinach Stuffed Chicken Breasts
Served this for dinner with friends and got so many great compliments. Made some changes: used sour cream instead of mayo, thawed the spinach in the microwave for 4 minutes on high, used goat cheese & Laughing Cow cheese instead of feta, no garlic, and 1/2 cup homemade bacon bits. Cut the chicken breasts in half length wise & wrapped the mixture with the chicken breast & partially cooked bacon. Brushed olive oil & garlic over chicken breast & bacon. Cooked for 25 minutes at 375 (covered with foil), then 20 minutes at 400, taking the foil off at the last 5 minutes. Perfect.

Chocolate Truffle Cookies
Great cookie, easy to make...sooooo chocolately. Replaced last addition of chocolate chips with 1/2 cup Andes mint baking pieces...amazing! Chilled the dough overnight, let it sit at room temperature for 30 minutes and it was the right consistency to form the dough into balls.

Strawberry Avocado Salad
Such a great salad, and so easy. Used Emerald Pecan Pie Glazed Pecans...wow! Update: Found a recipe for Candied Pecans. Rinse 3/4 c pecans in cold water. Drain, but do not dry. Combine 4 tbsp icing sugar, 1/2 tsp cinnamon, 1/4 tsp allspice and 1/4 tsp nutmeg. Coat pecans in the sugar mixture. Spread pecans on baking sheet (spray first). Bake at 350 degrees for 15 minutes. Oh, and we left the honey out of the dressing and just added more sugar; left out the avocados and it's now by far our favorite salad recipe.
