Aunt Anne's Coffee Cake

This tastes exactly like a coffee cake I used to make when I was a kid. It was a recipe from a little booklet published by either Robin Hood or Five Roses flour in the late 60s or early 70s. Well, the recipe booklet disappeared years ago, and I've been searching fruitlessly ever since, until today! This is it. Found the recipe this morning and made it right away. The only difference is the topping. The old recipe said to drizzle melted butter on top of the batter in the pan, and then sprinkle a sugar and cinnamon mixture on top. I don't think this recipe is supposed to have a traditional streusel topping on it like other reviewers have stated. I think you're supposed to end up with the topping melting into the batter resulting in this crunchy glaze. Absolutely delicious! I also used a 9" springform pan, and baked for 35 minutes, thanks for the tip!

Easy, Cheesy Tortellini Bake

Wow, this is really good. I used the full amount of tortellini and cut the sauce ingredients in half, and it made enough for dinner for two with leftovers for lunch tomorrow. The sauce was amazing. I used Prego Tomato, Onion and Garlic flavour. I love Prego because it has a sweet tomato taste, not salty. For the Alfredo sauce, I used President's Choice Roasted Garlic Alfredo sauce. It has a nice smooth flavour and doesn't have that odd aftertaste that Classico Alfredo seems to have. I will be making this recipe very often. It is good enough to serve to guests, but easy enough to make on a weeknight.

Butternut Squash Soup

Delicious soup. My blender with the glass jar kicked the bucket, so I got out the potato masher instead and mashed it in the pot, then added the cream cheese. I've had this recipe 'blendered' before, and mashing did not detract from the overall soup at all. It came out fairly smooth. I used homemade chicken stock, and one package of light cream cheese, and it was just right. I also didn't have any marjoram, so I substituted with oregano and a smidgen of thyme and sage (dried leafy, not powdered). Great soup, will definitely make again.

Barbie's Tuna Salad

Love this tuna salad. I've always used salad dressing and sweet green relish, so this recipe takes tuna to a new level for me. The dill is sublime! Use the full amount of mayo. Change nothing. UPDATE: I had a taste for this Tuna Salad but also craved pasta salad. So, I boiled 8 oz of bow tie pasta. Added 1/2 cup of frozen peas to the pasta water near the end of cooking. Then I combined all the ingredients for Barbie's Tuna Salad except the tuna. I tossed the tuna with the pasta and about three sliced green onions, then added the dressing, with about an additional 1/2 cup of Miracle Whip to moisten it up. This recipe makes a great pasta salad!

Awesome Ham Pasta Salad

It IS awesome! Couldn't wait till it chilled overnight. It is delicious right now, and we can't wait to try it tomorrow. I didn't add cherry tomatoes because their cost was totally prohibitive in our grocery store this week. I would love to try this in the summer with chunks of grilled chicken instead of the ham. This will be a regular. Thanks for the recipe!

Asian Coconut Rice

Just made this to go with Mango Curry Chicken. It is so good I just want to keep eating more and more! There is a lovely coconut fragrance as the rice is cooking, and the taste is very subtle but so rich. I followed the instructions as written and did not have any problems. I have pots with glass lids, so that has really improved the outcome of my rice attempts. I just tilt the pot while keeping the lid tight so I can see how much liquid is left. When there's no more pooling and the timing is about right, I'm never disappointed. This is by far the best rice I have made.

Fresh Rhubarb Pie

Yep, this is great rhubarb pie. I used freshly picked rhubarb and followed the recipe exactly. The bottom crust was nicely baked, not the least bit soggy. I will use this recipe from now on instead of the one I've used for 20 plus years, which says to toss the rhubarb in sugar and flour before filling the crust. The filling was nice and juicy but not the least bit runny. It was the perfect blend of sugar and flour. When you eat rhubarb pie, you want to taste rhubarb, right?

Donut Muffins

Scrumptious! They remind me of the Tiny Tom donuts that we used to get at the Food pavilion of the Canadian National Exhibition every summer. They made them from scratch on a little donut conveyor belt. These taste just as good, except they're much better because they're not deep fried. These simple and basic recipes always taste great.

We just decided that these are the best pops we have ever eaten. Raspberry jello with Cherry Kool Aid was pretty good. Time to hit the grocery store and stock up on all the other flavours. A great recipe for kids at heart.

Western Omelet Sandwich

I just made this for dinner and it was very tasty and filling. I like the proportions of the ingredients, which made the sandwiches very flavourful. I made it exactly as written, using red onion and deli sliced ham. I always order toasted westerns in restaurants but I liked this one better. Thank you for the recipe.

Fresh Dill Pasta Salad

I made this as written, but next time I would change a few things. I would double the pasta, double the dressing, double the shrimp and double everything else because you just want more and more! Thanks for the fabulous recipe!!

Old Fashioned Raisin Pie I

Chocolate Chip Cookie Ice Cream Cake

Easy and spectacular! I made this for my nephew's birthday and everyone raved about it. I used chocolate wafers for the crumb layer and around the outside, Chocolate Crunch ice cream for the bottom layer, and vanilla for the scoops. I put a blob of Strawberry Lavender jam on top of each scoop, then drizzled with hot fudge topping. I didn't add any whipped cream. It was gone before it had a chance to melt. This was such a fun dessert to make, and it looked very special. Thanks for the great recipe!

This recipe is delicious. I've been eyeing it up for a while and finally gave it a whirl. I've never tried clams and had bought a can out of curiosity. I halved the recipe as there are only the two of us, and had to leave out the celery because I didn't have any. I used small diced canned tomatoes that were already flavoured with garlic and olive oil for an extra little hit of garlic. Instead of salt, I added a smidge of sugar which I love in tomato sauces, served over pasta shells which seemed appropriate, and topped with feta which I grated instead of crumbling. Thanks for the great recipe!

Vicki's Hush Puppies

We live in Ontario and wondered what the heck a hush puppy was. We had it on good authority (friends from Tennessee) that they're pretty tasty, so we had to give these a try. Now I know what we've been missing. They taste like little deep-fried corn muffins with onion in them. I didn't have the self-rising ingredients, so I added 1/2 tsp of baking powder and 1 tsp of salt as suggested in other reviews. I added 1/2 cup of frozen corn kernels that had been chopped fairly small, and the moisture that was created as they thawed added enough moisture to the batter that I didn't need to add any milk as suggested by other reviewers. They were absolutely delicious. I think they would taste great alongside a bowl of chili. Thanks for the great recipe.

Microwave Oven Peanut Brittle

This is a foolproof and perfect recipe for peanut brittle. The first batch was intended for the Christmas treat tray but it didn't make it because we ate it all. Had to buy more peanuts and start over. Thanks for sharing this recipe.
