Tasty Tuna Burgers

Wonderful! I made the recipe exactly as written. Topped with a combo of tartar sauce and cocktail sauce and some extra chopped dill pickle mixed in. So easy and delicious! My hubby thought they tasted like crab cakes.

Rachel's Cranberry Chicken Salad

The perfect chicken salad! I used canned chicken, red apple (green would have been better), light mayo and left out the dill. My family ate the whole batch at lunch today. Wish there was some leftover!

Easy OREO Truffles

Awesome!!! They were gobbled up at a party I brought them to. I did some covered in white chocolate in addition to the ones coated in the Baker's chocolate, and everyone loved them both ways. To die for!

Hummus III

This is my first time making hummus and I'm kicking myself for waiting this long to buy tahini! I will be making this regularly. As others suggested, I used only 2 tablespoons of tahini and a little less lemon juice to suit my taste. Can't wait to make some with roasted red peppers added!

Chicken Zucchini Casserole

So good! I tried to make it a little healthier by using whole wheat stuffing, 1/2 cup milk and just 1/4 cup margarine, a light cream of mushroom soup, and added corn and green beans for extra nutritional value. Fresh mushrooms would have been a nice addition, I'm sure. Definitely a keeper!

Pork Tenderloin with Creamy Herb Sauce

Delicious and easy! I used evaporated milk instead of light cream and didn't have any dried parsley, but otherwise followed the recipe exactly. Served with yukon gold mashed potatoes. Will definitely make again!

Fresh Tomato Shrimp Pasta

Yum! "Restaurant quality" according to my hubby! I used a can of diced tomatoes with chiles (we like spicy food) instead of the fresh tomato, used dried herbs and whole wheat thin spaghetti. Used the fresh mozzerella, but I bet it would be great with feta, as well! Very tasty and pretty healthy, too!

Baked Honey Nut Chicken

I used boneless, skinless chicken breast, so that cut down on the cooking time. I also used fat-free butter spray to coat the chicken before baking, rather than real butter. Served it with butternut squash risotto and zucchini. Yummy!

Creamy Mushroom Soup

Delicous! I made quite a few changes, but tried to stay true to the idea of the recipe. Used an onion instead of shallots, used all button mushrooms, used evaporated milk instead of half-n-half, and nutmeg instead of cinnamon. I used what I had onhand, but look forward to trying the real recipe sometime soon!

Very good! I poured some lemon juice in the bottom of the pan and added some kosher salt and pepper to the seasoning. My chicken was very moist and flavorful. Good go-to baked chicken recipe!

Soooo good! I made it exactly as written, with the exception of using low sodium chicken broth instead of the water and boullion, and I used ground hot sausage. Very flavorful and so easy to make!

Vegetarian Tortilla Soup

Delicious! I used fresh peppers and onions, frozen corn, and added a can of black beans, and used one can of diced tomatoes with chiles instead of the three cans of chile peppers. It was so good and I'll definitely make it again!

Very tasty! I used much less brown sugar, added salt and pepper on the chicken, and used chicken broth with cornstarch to thicken the sauce. Served over white rice. Yum!

Creamy Kielbasa and Potato Soup

Fantastic! I made the recipe as written, other than using a full pound of kielbasa and adding a cup or so of frozen corn. Also delicious topped with cheddar cheese and/or sour cream. Served it with french bread. Will make again! I think next time I'll also add some chopped red peppers.
