Smoky Black Beans
I eat a lot of beans and grains, and I get tired of the same old, same old cumin/curry options! This blew me away! This is my new favorite dish when I want to make something special. I didn't have bacon, but I used a cube of chicken stock for flavoring. The essential ingredients are the sugar, liquid smoke and molasses. The best part is that it is one of the easiest dishes I make; I keep cooked beans in the freezer to whip it up in less than 20 minutes.

Quinoa Biryani
This is an amazing way to eat quinoa. I am trying to get more healthy quinoa in my diet but get tired of the simple quinoa-onion-beans combo or the add-it-to-soup. This is a super delicious, novel way to eat it! My fiance is from Bolivia, the land of of quinoa, and he loved it and said he had never had quinoa made this way before. I also added more spice and plenty of salt, as other readers commented, and I just used the vegetables I had on hand: corn instead peas, butternut squash cubed instead of broccoli or cauliflower, and it was great!

Mock Tuna Salad
I give this 5 stars because it is so creative, easy, cheap, and delicious...and there are just as many variations on this as the classic tuna fish! My upgrade to give it more of that under-the-sea flavor you might crave was a sprinkle of chopped, reconstituted dry algae (hydrated in the lemon juice); I keep algae on hand to make Asian style soups. I had no relish, so I substituted fresh cucumber and vinegar, and it turned out great!
