Enchilada Casserole III

I rated this 5 stars because of the easiness to prepare and the taste. I had a lot of leftover taco meat in the freezer from a party and couldn't decide what to make for dinner. I came across this recipe and decided to try it, although I don't make casseroles very often. I did substitute the dry enchilada mix and tomato paste for canned enchilada mix. I didn't use the spices, since the meat was already seasonsed. Otherwise, I followed the recipe exactly. Everyone liked it, even the picky kids. This is great to throw together when you are short on time, yet very filling also. Having the taco meat already prepared did help immensely with the time. I will definitely add this one to my recipe book.

Baked Pork Chops I

This is the best pork chop recipe that I have used -- totally a comfort food! I used 2-inch butterfly pork chops and cooked at the amount of time specified. The only change I made was to use fresh garlic sauteed in the olive oil before adding the chops instead of garlic powder, and I doubled the sauce to serve with mashed potatoes. Kids loved this one!

Heather's Grilled Salmon

I wish I had more time to marinate this. It was really good even though it marinated only 30 minutes. I bet it would be phenomenal marinating longer! Served with pasta, olive oil and garlic. Very good!

Sour Cream Chicken Enchiladas

I have made these enchiladas numerous times and always get rave reviews! First time reviewing them, but you can't miss -- especially if you like spicy! To save time, I sometimes use the Purdue southwestern chicken strips.

This was very good and simple to make. I used Panko crumbs instead of bread crumbs to make it lighter. I added a little bit of white wine to it when I added the lemon and served over angel hair pasta. A great dish for Lent!

Martha's Vegetable Beef Soup

I was a little apprehensive that this soup would not have much flavor, but was pressed for time, so decided to try it. I browned the ground beef with onions and fresh garlic. Instead of water, I used beef broth and also added a 1/4 cup of white wine. I added frozen mixed vegetables with pasta shells. I also didn't have any tomato sauce, but had pizza sauce, so used that instead. This soup turned out very delicious! Even my finicky 7-year-old and 3-year-old loved it. Thank you for a quick, but delicious soup.

Lamb Chops with Balsamic Reduction

I have never cooked lamb chops before due to the fact that my husband is Greek and I didn't think I could prepare them as well as the Greeks do. Fortunately, I decided to give this recipe a try. It was wonderful! The balsamic vinegar cooking was a little overwhelming, but the taste was delicious! My husband was in awe of this recipe! Thanks P. Gray!

Biscotti Toscani

These were great and very easy to make! Instead of dipping them in chocolate chips, I bought some Godiva dipping chocolate bars at Sam's Club and dipped the ends of the biscotti into the chocolate. They were delicious and I brought them to a cookie exchange where everyone raved about them. Make sure to use a sharp, serrated knife.

Chicken Piccata II

My whole family loved this, including my finicky kids. It tasted like restaurant quality piccata. I did add about 1/2 cup white cooking wine and when finished cooking, I added capers. I served it over white rice. There was none left! Definitely a keeper!

Asiago Dip with Crostini

This was delicious! Next time, though, I might skip the mushrooms and add artichokes instead. The mushrooms really didn't add anything to it. I also may try another suggestion and put fresh garlic in it.

Baked Scallops

This was delicious! Instead of adding the garlic powder, I sauteed fresh garlic in the butter and added dill weed and lemon juice. The results were fantastic. My kids don't eat seafood, so that's why I gave it a poor kid friendly rating. This is the first time I made scallops, and I really appreciated how easy and time-saving this was to make! Thank you John!

Jamie's Cranberry Spinach Salad

Kudos Jamie! I brought this to Easter dinner at my mom's, where our large family (about 38 people)loved it! I doubled the recipe and added gorgonzola cheese, as some of the reviews suggested. I did have about half left over, due to the fact that the kids wouldn't try it, and there were plenty of other delicious dishes, but the kids are not big salad eaters. My husband took some to lunch and his comment to me was "this salad is KICK-***!" My family is used to gourmet food, as my mother is a wonderful cook, so we will definitely have this salad again at our family gatherings, and I will make it again for dinner parties for friends.

Jambalaya II

I had never made jambalaya before, but decided to try it for my daughter's birthday party, which fell on Superbowl Sunday. We had 35 guests at the party, and they all raved about it! It did take a while to cut the vegetables, because I doubled the recipe (to 16), but it was otherwise very simple. I used cooked Cajun sausage from Sam's club and put it in when I simmered it. I made it the day before and then the morning of the party, I added the rice. It was a little too spicy for the kids, but some of the adults wanted it hotter! I definitely recommend this and it would be a great dish for Mardi Gras. Kudos to Claire's aunt!
