Butternut Squash Soup II

This is a great tasting, healthy comfort food. It has the mouth feel of a chowder with hardly any fat. I used olive oil instead of butter, and instead of salt and pepper, I used white pepper and curry seasoning. The broth offered plenty of salt. I will definitely make this again.

Slow Cooker Texas Pulled Pork

I misread the recipe and added 1/4 c mustard instead of a Tablespoon. Even so, this turned out fantastic. My husband isn't too fond of prepared BBQ sauce, so actually it ended up being a good mistake.

Amish Breakfast Casserole

I mixed this up the night before and baked it in the morning. It worked great, although I had to bake it for an hour (at 350) before it was really set. I omitted the bacon, but neglected to add more salt so it was a little bland. Next time, I think I will add the bacon or sausage. Also, instead of chopping onion, I used frozen potatoes o'brian that had the onions in it as well as red and green peppers. They added nice flavor. Overall, this was good and I would make it again.

Energy Bars

I put all the ingredients in the food processor to hopefully disguise the dried fruit and seeds, then baked it in a 7x11 inch pan. It came out to a dense muffin consistency. The kids still didn't like them (mostly because they read the recipe and knew what was in them), but I think they are tasty. Next time I might add a little peanut butter and maybe a FEW small chocolate chips.
