Applesauce Oatmeal Cookies
Wow, this is a great recipe and very forgiving! I made it as is and it was wonderful. I then reduced the sugar to haf a cup total (brown), added stuff that I had like hemp seed, flax seed, and coconut, and ommitted walnuts so the kids could take them to school. I even used blueberry apple sauce that my daughter wouldn't eat. They were just as awesome! 3 times with different ingred. and each time soft chewy, sweet and delicious! Best cookie recipe to date!

Zucchini Cookies
This is a great recipe. I used butter instead of margarine but otherwise kept the recipe as is. I would reccomend a few things though. I would peel the zucchini before grating, as green bits in cookies aren't that nice looking. I would also grate the zucchini more fine than I did. It made the cookies a bit stringy in texture. (I will try the idea of another reader and use the food processor) Otherwise they were soft (almost cake like) and have a great taste. I will certainly make them again, but will add a bit more of the cinnamon and maybe some ginger too! Great first attempt!

Slow Cooker Lasagna II
This recipe was great! I switched ricotta to cottage cheese and parmesan to asiago just because we like those cheeses! I added a bit more sauce (as suggested by others). It set up well, (eggs really help with that)and cooked all day while I played taxi :) My one change would be to cook the ground beef with some garlic, onion and spices. I loved that it wasn't greasy or sloppy AND I didn't have to wait for it to cook!
