Creamy Brown Rice Pudding

This is delish! For anyone following a diebetic diet, the brown rice is always a better choice. I used 1/2 cup of honey. Honey takes longer to digest, again, better for your diet. I also added raisins, also used fat free evaporated milk and skim milk. You won't notice the lack of fat. I also took a readers idea for ground cinnamon. This really is one of those I will use forever...thank you for your recipe Diana.

Pecan-Oatmeal Pancakes

This is a great pancake. Being a diabetic, having whole grain and oats are so much a better choice. So, the only thing I changed the first time, I used 3/4 C and a 1/4 C of whole wheat. The next time I made it, I tweeked it more to make it healthier....instead of milk, I used fat free buttermilk. Because I used the buttermilk , I added 1/4 tsp. of baking soda in the dry ingredients. I used apple sauce instead of the butter...and I used old fashion oats. Now to make sure everything was ready to use...I let it sit at least 20 minutes before using. This way the oats are softened and you can spread the batter into perfect rounds, no mound of oats in middle and thin batter around it....Thank you Fred for you recipe.

Three Bean Salad II

This is so delish, and good for you. My husband said he never thought he would eat something that looked like he loves it too! I used garbonzo beans instead of kidney beans. I made it like it called for first. Then I tweeked it by just using 1 cup of sugar instead of 1 1/4 cup..we never noticed that 1/4 C. missing. I have mmade tgis many times now. And there is usuall enough liquid left to use again with new beans and onions....just leave it in for at leaast an hour....thanks for this recipe idea Kim.....Cindy

Slow-Cooker Barbecue Ribs

I have tried a many a Rib Recipes...this is by far the easiest and best tasting I have ever tried...I did what one of the other reviewers did...used BBQ sauce instead of catsup, and catsup instead of Chili sauce. I used Red wine vinegar and only 2 1/2 Tablespoons instead of 4. I also cut back some on the brown sugar...I did not brown them first, just put them right into the crockpot, then poured the sauce mixture over them. But I did put them in the oven for 15 minutes...this added a wonderful caramelizing on them... My Hubby loved them. I want to thank everyone for their reviews and the one who posted this great recipe...this is the one I will do from now on.

Oregon Salmon Patties

No need to remove the bones, they are a great sorse of calcium. They are really so soft, you can crush them with your fingers. These Salmon cakes were very good. We love Salmon cakes in our home too!

Easy Sugar Cookies

Me again...I tried making these with Almond Extract instead of just like the Almond cookies you get in a Chinese Resturant.I still rolled them in Raw sugar...Taste Great...What a good recipe..Cindy

Buttermilk Chocolate Cake with Fudge Icing

I have made this recipes 5 times is really a cake for chocolate lovers. I have been allergic to chocolate for years...but I can eat recipes made with Chocolate powder instead of the rich Chocolates you have to meat first. The Icing should not be mixed as long as stated in the recipe...just enough to thicken just a little and thin enough to still pour on cake..Enjoy!
