Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce
I cheated and used Jiffy Corn Muffin mix as well, 2 boxes. I also made this a southwest type mix by adding 2 packages of taco seasoning to the mix. For the hot dogs I used the smoked little weenies and cut them in half. I poured the batter in mini muffin pans. I took them to our football tailgate this past week-end, and everybody raved about them. I came back empy handed too!

Jalapeno Popper Spread
This was oh so good, and tastes just like the expensive poppers we order from our local pizza place. I will now be making this when we get the urge for poppers. I did not have any bread crumbs but had a sleeve of Ritz whole wheat crackers, so I stuck them in the oven at 350 for about 10 minutes to get any mositure out. Once they cooled I smashed them into crumbs and sprinkled on top, baked according to the directions, and served with Scoops.

Coffee Shake
A tip for all of you that I do. Any left over coffee I have in the pot after hubby and I are done with it , I pour the remaining coffee in ice cube trays to use for Iced Coffee drinks.
