This was such a fun idea! I thought I had yellow cake mix on hand but didn't, only had strawberry mix. I had already had the oven preheating, butter/brown sugar mixed up, and everything out on the counter so I used what I had. Next time I will make just a wee bit more of the brown sugar mixture since I barely had enough to put into each cupcake hole --and I was skimpy with all of them. Plus, this makes about 3 dozen since the pineapple parts take up so much room in the cups. I baked a whole cherry with the stem as suggested by another reviewer in one of the dozen and I preferred those better than just a half. Also, added a teaspoon of pancake syrup with the brown sugar/butter mixture because I had read somewhere it will help with getting rid of the grittiness of the brown sugar...and it worked great! Needs just a few minutes to cool down so they can be flipped on to a flat pan. FYI, the strawberry cake mix was delish with this recipe ... I used Better Homes & Garden cupcake pan from Walmart and for the first time in my entire life, the cupcakes slipped out without any problems whatsoever! Thank you for sharing this recipe!!! I look forward to making more of these babies!! =)
