Taco Pie

Amazing! This recipe is easy to make and really delicious! My family devoured their plates and asked for seconds! The only things I did differently was I added a little sauteed onion and garlic to the beef mixture and I also didn't use as much sour cream. I used Doritos for the cruncy topping and it was wonderful! Also, make sure you coat the bottom of the pan with a good layer of baking spray, otherwise the crescent rolls will stick.

Tater Tot Casserole II

This is a great base recipe. I made a few tweaks to the original. I added chopped onion to the ground beef and seasoned them really well with kosher salt, pepper, onion powder and garlic powder. I also layered in a bag of mixed frozen veggies and used cream of chicken soup instead of cream of celery. I skipped the can of condensed cream to have a thicker sauce. You also don't need to thaw the tater tots beforehand. With an hour cook time they'll be plenty hot when they come out. My super picky husband loved this dish and had three helpings. I will definitely make this again.

Healthier Chicken Enchiladas I

This recipe is a winner. I used whole wheat tortillas instead of white flour and added a bit more of the green and red peppers because my husband loves them. Also, I found I didn't need nearly as much taco sauce as the recipe called for, but that could just be my personal preference. The dish turned out beautifully and I swear it tastes exactly like the full fat version. I will definitely make this again!

Flavorful Beef Stir-Fry

This is a really great, easy recipe for stirfry. I only made a couple of modifications. The first was substituting mushrooms for water chestnuts, because I hate water chestnuts. The second was using brown rice instead of white. The next time around I think I'll let the marinade soak in for a couple more hours, but I definitely plan on making this again.

Chicken Pot Pie III

I think people need to lighten up a little. Chicken pot pie isn't exactly the healthiest recipe whether you're using canned soup or making the sauce from scratch. I think this is a great basic recipe. I used a full can of cream of chicken and cream of celery. I used fresh veggies instead of frozen (celery, carrots, onions). I also halved the thyme, because I only like it in small amounts, and I added a little black pepper, onion powder and garlic powder. Also with the chicken I didn't boil it all the way. I left the breasts a little pink in the center so they could cook through in the oven and not dry out. Overall delicious and easy dish!!

Zucchini Patties

Really yummy and easy to make. I followed the suggestion of the poster who said to substitute instant potato flakes for the flour, and I'm glad I did. The potato gave the patties a nice crunch to them. My only caution for those making this recipe is to keep an eye on the patties, they cook super fast and can go from done to burned in a matter of seconds.

Cajun Chicken Pasta

Absolutely delicious!!! After reading reviews, I decided to double up on all the seasonings because I like my dishes with a lot of kick. I also used a spoonful of cornstarch to thicken up the sauce and it worked great. I added a sprinkling of paprika for color and the dish turned out beautifully. Easy to prepare and lots of flavor. Thanks for a great recipe!!

Richard's Chicken Breasts

Delicious and easy! This dish is super quick and easy to prepare and has tons of flavor. I read some reviews and as others recommended, I sauteed the mushrooms and onions before adding the wine and I got a wonderful caramelization on them. I also used canola instead of olive oil to sautee the chicken, because I find that the olive oil burns too easily. Overall a wonderful recipe, even my super picky husband loved it.

Boneless Buffalo Wings

This recipe is both fantastic and easy to prepare. I prefer a really well seasoned fry mix, so I doubled up on the seasonings with the exception of the salt and cayenne pepper. The key is taking time to refrigerate the chicken so the coating really has a chance to stick and also make sure you fry in a cast iron pan, it will come out so much better. All in all, this was a huge hit with my family, I'll definitely make this again. Thanks for the great recipe!!!

Simple Turkey Chili

This is recipe is phenomenal and very easy to make. After reading other reviews, the only thing I tweaked was using less water as I don't like my chili to be too soupy. I served the chili with lowfat sour cream and lowfat shredded cheese and everyone in my house loved it. I will definitely make this again.
