Parma Chicken

Great recipe. The chicken was a bit dry/overcooked, though. I'd cook it a for either less time or turn down the heat some. I'm going to try 30 minutes next time and then add 5 minutes if it's undercooked. Excellent flavour, though!

Naan

The first few times I made this recipe, I cut the sugar down to 2 Tblsps since I found the dough too sweet. At that time I was cooking it in my cast iron skillet like I would tortillas. One day we decided to cook it on the grill. I forgot to reduce the sugar and guess what? It wasn't too sweet if cooked properly. I guess the sugar must burn off on the grill. Also, the Naan was much puffier and tasted better cooked on the grill. It also left the kitchen less messy! Heh. This is a great recipe and I use it allll the time.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Great recipe! We left out the mushrooms, not being mushroom fans and added the juice of a lemon to lighten it up a bit. Probably not necessary. This seems like a great, lower calorie, replacement for an alfredo.

Arrabbiata Sauce

Fabulous recipe! This sauce is light and delicious. I ended up doubling the sugar simply because I like a sweeter sauce. I also added a a TBSP of olive oil. My family enjoyed this recipe and I will make it often in the future.

American Lasagna

This is a great recipe that produces the perfect consistency. When you slice this lasagna there is no run off of juices, just perfect layers. For a nice variation I add sweet italian sausage. Try using no-cook lasagna noodles. They are perfect for this dish and really save on the prep time!

Chili I

I love this recipe! For variation I use Chocolate Stout or Guiness for the dark beer. I also will put half of it in a casserole and cover it with a cornbread mixture and bake it. Yummy!
