Unbelievably Easy and Delicious Vegetarian Chili
This is really great. Would be wonderful for large parties! I used a two serving can of Hormel Chili with both beef and beans, and then added a 16 oz can of northern beans, a 12 oz can of white shoepeg corn, some lamb vindaloo and basmati rice leftovers from an indian restaurant, 2 cups v8, cayenne pepper, hot sauce, ranch dressing, red pepper flakes, canned green chilies, and a dollop of sour cream and half a handful of sharp cheddar cheese to each bowl. Can someone say food coma? :)

Mushy Peas I
This is great! Next time I will drain the peas (I used sweet canned) to have a thicker consistency, although a thinner consistency can be used as a soup or a "gravy". I added a half teaspoon of wasabi paste and 8 tablespoons sour cream as well as and 4 tablesppons minced garlic (I love my garlic). Hubby likes it too. I didn't have heavy cream, so i made some out of 1/4 cup regular milk and 2 tablespoons butter in addition to the 1 tablespoon butter called for in the original recipe. So good!

Quick Brownbag Burritos
Great recipe! I didn't have chili powder so I used sofrito (2 tbsp) and added leftover meatballs from another dish. I also used an 8 ounce block of velvet cheese that I cubes up and melted into the mixture during the last 4 minutes. I warmed the tortillas While the filling cooked. It came out great! It was just my husband and I and we were full after two small burritos each. We have another whole meal of it to which I am going to add some white beans and hot sauce to, as suggested. I came home during my lunch break from classes to cook this and it was fast, easy, and delicious! My husband loved it too!
