Penne Rosa with Parmesan Crusted Chicken

This was wonderful- everybody in the family loved it. I did make 2 very small revisions. I sauteed the mushrooms and spinach in a little olive oil with garlic. I also substituted a can of rotel tomatoes for the italian and cut back on the red pepper. Will add this to our regular rotation!!

Chicken Lasagna with Andouille Sausage

I made this last night and everyone absolutely loved it. The only change I made was I sprinkled a half cup or so of cheese in each layer to hold it together. Then didnt use as much on the top. I also made my own simple alfredo sauce since I don't like store bought. (that part only takes about 10 minutes).

Pork Roast With The World's Best Pork Loin Rub

This is one of my very favorite recipes! I made one small change and that was I omitted the crushed red pepper (didn't have any). It still had PLENTY of kick. I also use this rub on chicken and I bet it would be terrific on ribs. Everyone in the family loves it and since it makes so much I just keep it in a ziplock baggie with my spices.

Penne Pasta with Veggies

Love this dish! Used some grilled chicken instead of proscuitto and used less butter 1/2 cup and little less sun dried tomatoes. It was wonderful but barely fit in the 9x13. 3 people ate it for dinner and there is still a very full pan left.
