About this Cook
I have 4 children aged 12-21 and love to cook for them but they don't always appreciate the efforts. I work 3 days a week and spend just about every night and weekend at sporting events.

Penne Rosa with Parmesan Crusted Chicken
This was wonderful- everybody in the family loved it. I did make 2 very small revisions. I sauteed the mushrooms and spinach in a little olive oil with garlic. I also substituted a can of rotel tomatoes for the italian and cut back on the red pepper. Will add this to our regular rotation!!

Penne Pasta with Veggies
Love this dish! Used some grilled chicken instead of proscuitto and used less butter 1/2 cup and little less sun dried tomatoes. It was wonderful but barely fit in the 9x13. 3 people ate it for dinner and there is still a very full pan left.
