Garlic Pork Tenderloin with Mushroom Gravy

Reviewed: Feb. 24, 2014
We loved this! I used cremini mushrooms. I did have to cook the tenderloin 1/2 hour longer, but could be my oven. My gravy didn't thicken as I would have liked so I added 1/2 package of powdered pork gravy mix and it was perfect! Restaurant quality! I served it on a bed of rice and peas, delicious! Thank you for this recipe!

Fruit Cocktail Cake VII

Reviewed: Feb. 24, 2014
This was a delicious cake! I had to make it in an 8x8 pan since it was all I had so had to bake it about 10 mins longer. I also had more topping than needed, but too much is better than not enough. I too decided to use 1/2 cup white sugar and 1/2 cup powdered sugar in the glaze. Boiled it a couple of minutes (stirring) and it set up fine. Think the next time I will add a little cinnamon and vanilla to the cake batter, but was very tasty!

Vegetable Lo Mein Delight

Reviewed: Jan. 25, 2014
I loved this! It was easy peasy and very tasty. I did add some garlic plus (I use that @#%$ in everything)and some grated ginger. I chose lo mein noodles rather than pasta and it was a perfect combination. I am not a fan of fish sauce so this suited me fine. Served it with breaded chicken bites in mandarin sauce and was yummy. Will definitely make again and again.

Pistachio Bar Dessert

Reviewed: Sep. 18, 2013
I liked this very much! It should have been simple, had I followed the recipe to a T, however I halved the recipe to make an 8x8 pan size and had some trouble when putting the first layer of pudding onto the base. It was very thick and the base crumbs kept sticking and mixing in as I tried to spread it...perhaps because I was in a hurry and didn't put the base into the fridge before this step. All in all it was very good. I would highly recommend you chill the base crumb crust WELL before trying to spread the first layer however.

Oatmeal Peanut Butter Cookies

Reviewed: Feb. 12, 2013
This is the way I have always made peanut butter cookies. But I misplaced my recipe and so I thank you...this is pretty much it! I wouldn't change a thing. Someone has probably already posted this, but one thing I do for that authentic pb cookie look is to flatten the blobs of dough slightly with the tines of a fork prior to baking. Also need to use heaping tbsp sized balls of dough for a good sized cookie. Wonderful! Thanks again!

Best Brownies

Reviewed: Feb. 8, 2013
I prepared this recipe exactly as written and simply thought it was Ok, not fantastic. The brownies turned out great texture-wise but for some reason they tasted noticably salty. Perhaps the 1/2 cup of butter should be unsalted butter, but it does not state this in the recipe that I can see. I will try it again because it is quick and easy, but will definitely use the unsalted butter next time.

Campbell's Baked Macaroni and Cheese

Reviewed: Jan. 22, 2013
I read all of the reviews prior to trying this and have to say I do think it would have been very bland without some additions. I heated the soup and milk (a little more milk as some suggested)and then melted in about 1/2 cup of Imperial cheese and some diced onions I had sauteed in butter. I also added a tsp of mustard and a little garlic powder. After I stirred the macaroni into the cheese mixture, I also mixed in some cubes of mozzarella. I also added some grape tomatoes because I love tomatoes in my mac and cheese! This was the creamiest mac and cheese I have every made and was excellent with the additions. Oddly, I am not usually one to make so many additions to a posted recipe but I believe this one benefits from this. Thanks for posting this!

Mother's Ham Casserole

Reviewed: Feb. 22, 2012
This is delicious! It's also very adaptable to whatever you have on hand, which is always helpful. I added broccoli, mushrooms and minced garlic. When making the cheese sauce, I wasn't sure I would have enough (since I used alot of ham and vegetables),so I decided to add a can of mushroom soup to the cheese sauce to make it go further. My husband loved it and ate more than he should have, for certain...not very calorie wise, but really yummy! Thank you for this!

Candied Chicken Breasts

Reviewed: Feb. 9, 2012
Just prepared this for dinner and it was really tasty! Hubby said better than his mom used to make...that's saying something:) I happened to have some frozen pineapple chunks and so I tossed them on during the last half of the cooking. I cut the recipe back to 2 servings and was fine...will never be feeding 10. The only thing I did differently was to mix a little cornstarch and water, removed the chicken breasts and stirred this into the sauce while heating a few minutes to thicken it up. Delicious!

Pineapple Crisp

Reviewed: Feb. 2, 2012
My coconut happened to be sweetened so I cut all of the sugars back, using just 1/4 cup brown sugar in the crust and 1/4 cup in the filling. It turned out wonderfully! I was using fresh, very ripe pineapple so it was plenty sweet enough. I served it with a dollop of vanilla yogurt...yummy!
