Refrigerator Dill Pickles

I've never made pickles. Really, I didn't even know I wanted to until I walked through the Farmers Market and saw the cutest little pickling cucumbers, which I purchased. Then it was time to find a recipe. I was looking for something not too complicated since this was my first attempt. I wanted something that met my taste buds. I wanted something that everyone else raved about. THIS WAS THAT RECIPE!!! I followed the directions with slight modifications. I split the vinegar... 1 C White and 1/4 C Apple Cider. I also added peppercorns and exchanged the sugar for Splenda. Other than that, verbatim. I will consider myself a pickle maker from now on!! Thank you for sharing your recipe.

Chef John's Chicken Lettuce Wraps

I made this over the weekend. I followed the recipe 99% of the time. The only thing I had to compromise on was the mustard.... I didn't have dry mustard on-hand so I used prepared horseradish mustard. Even with a variation on the mustard the recipe resulted in a flavor that is just like the restaurant version. I also made a sauce for it made of peanut butter (+/- 1 tsp., hot water to thin it, soy sauce and a few drops of tabasco. Mix to taste.) Everything was great! Thanks for sharing an awesome recipe.

Garlic Sauteed Artichokes

I made these the other night and they came out great. I did add a bit of lemon juice and Italian seasoning to the water oil mix, which was a good addition. Overall, very easy to do and very tasty. Will be making these again.

Scalloped Potatoes I

I hadn't made scalloped potatoes in quite some time and this recipe seemed to me to be the easiest way to get back into it. I added about 1/4 cup sour cream and used fat free half and half to thin the mix because it seemed to thick to "pour". Added salt and pepper, too. They came out great!!!

Very Easy Mushroom Barley Soup

I used low sodium beef broth and added 1/2 pound of stew meet cut into small pieces. Other than that, everything else was prepared the same. Easy recipe and tastes great!

Split Pea and Ham Soup I

I didn't soak the peas, I put them straight into a crock pot along with a Honey Baked Ham Bone, reduced sodium chicken stock, onion, celery, carrots, a bit of garlic and pepper. I didn't add salt since most said the ham bone took care of that and they were right. I also added a bay leaf. Not great changes, but it added to the flavor and if I don't have to soak or sauté then it makes it that much easier.

Slow-Cooker Chicken Tortilla Soup

I have made this several times now and it just keeps getting better. You can play with the ingredients a bit but it's really not necessary. Perfect just as it is!

Szechwan Shrimp

I tried this tonight for dinner and it was the BOMB!!! I followed the recipe for the liquid, doubled it as others suggested due to the veggie additions - sliced carrots, a whole bunch of green onions and pea pods. Served it with rice and OMG!!! This is going into the rotation when I feel like shrimp.

Individual Baked Eggs

Very easy to do, great taste and clean up is a breeze! I used black forest ham because I didn't have bacon, so next time will be with bacon. Also used shredded cheddar/jack cheese instead of the slice. I will definitely make these again.
