Just okay. Not as cheesy as I hoped. Next time I'd cut the salt. It tasted much better with butter brushed on top.

Honey Orange Basil Chicken

Doubled the marinade and used it as a sauce. Added approx. 1/4 cup of corn starch to make it thicker and cooked it in the oven at 350 degrees for about 30-45 min. Tasted very good. Sweet without being too sweet.

Sean's Falafel and Cucumber Sauce

The sauce was good. I used Greek yogurt instead of regular. The mix seemed to be missing something so I added a squeeze of lemon juice and a dash of lemon pepper, which seemed to do the trick. It's a really good, mild sauce and I like it a lot. Next time, I'd make 1/3rd more sauce because I like cucumber sauce so much. For the patties, I added two eggs and had to substitute cilantro for coriander. Hand-mashing the garbanzos was a bit of a pain because the beans slipped through the space in my 'coil-style' hand masher. I found that quick, angled strokes worked best. It didn't take much pressure to make the soft beans burst. I baked the patties at 400 for 10 minutes a side and then broiled them for two minutes. The texture was good. Having whole beans that slipped through the mash didn't seem to matter. No problem with the baking powder, but I wasn't frying them. Together, the patties and the sauce taste really, really delicious. I'm adding this to my regular meal rotation. I'm hoping the mashed stuff will freeze well so I can have a big tub of this for lazy nights when I don't feel like cooking.

Caramel Grapes

Yum. This is great for using up a lot of older grapes. However, even with 1/2 the sauce, it's too gooey for me. I think next time I will try 1/3rd of the sauce. The caramel flavor adds some interesting depth, but I also enjoyed just the sour cream/vanilla/sugar mixture as well. Either way is good.

How to Make Vanilla Ice Cream

This was great. Easy recipe, no raw eggs. This was our first time ever making ice cream. We followed the directions exactly, including leaving the stuff to chill overnight. Some of the best vanilla ice cream I've ever had. I can't wait to try it again with some other flavors.

Corn, Sausage and Pepper Chowder

Sweet and Spicy Green Beans

Yum. A lot like green beans I had at a Chinese Restaurant. Tasted even better the next day, when they had time to sit. Like others, I substituted garlic and chili sauce because it was what I had on hand.

Peanut Butter Cup Cookies

Loved these! I like to think of them as 'reverse peanut butter cups'. I ended up with a little too much filling per cookie. I tried dark chocolate and regular and the milk was definitely better. Great Christmas cookies, because they look like they take way more work than they actually do.

Raspberry Truffle Fudge

Yum! We used raspberry jam instead of raspberry alcohol. I didn't bother straining the seeds out--you can barely tell they're in there. Next time, I think I would double the raspberry layer or half the chocolate under-layer, because I would have preferred a stronger fruit taste. I can't wait to try making this with other jam flavors, like orange and strawberry.

Big Soft Ginger Cookies

Yum! These were some of the best ginger cookies I've ever had! I used fresh ginger (about 2 tblspoons) just to see if it made a difference--I think the cookies turned out more moist that way. I also used only one 1/2 stick of butter because that's a lot of butter. But these were gone straight out of the oven. I also did what another reviewer suggested and added a tiny bit of orange juice concentrate. I might cut back on the molasses next time, it's a little overpowering. But these are very, very good. Cooking time ended up being 11 minutes + five minutes sitting on a hot pan for us and our oven + high altitude. I will definitely make these again.

Greek Rice Salad

As written, this recipe was just okay for me. But when I took one reviewer's suggestion and added a teaspoon and a half of vinegar, the flavors really took off. Especially the feta. I live in a very dry climate, so I didn't worry about the cucumbers and tomatoes mushing up the salad. I found they did a little, but not enough to be off-putting. The salad was still good next day.

Crispy and Tender Baked Chicken Thighs

I liked how juicy the chicken was on the inside and how crisp it was on the outside. The spices were okay...I doubled them but they still tasted a little eh to me. I think I would have liked them more if I'd put them under the skin. The juice coming off the chicken tasted absolutely superb on mashed potatoes though.
