Mushroom Crusted Ham and Cheese Pie

It more or Less tasted like quiche. The crust would make an excellent side dish on its own, though. Tasted like stuffing but with more mushrooms than breadcrumbs.

Delicious Chickpea Curry

This was yummy. I doubled the pears and halved the cayenne pepper. I will definitely eat again. NOTE: The default picture looks like soup, but it comes out thicker the longer you cook it. I found the consistency to be fine without blending. Next time I might try cooking it all in one pot--seems silly to have a separate pot just for the broth.

Spanish Rice Bake

This was great! Delicious! I had the same problem that a lot of people did with the rice burning/cooking through all the liquid without softening enough. This is despite the fact I never drained the hamburger (it was low fat to begin with) and added a whole batch of the 'chili sauce' recipe I used from this website--so about double the non-water liquid. Next time, maybe I'll try a lower temperature/longer cook time and double the water as well. I'll have to look at the comments. It probably doesn't help that I'm cooking at high altitude. But the recipe tasted so good in the end that tweaking the time and temp will be worth it. The other subs I made were to double the cheese I put on top and use 2 jalapenos instead of green pepper because that's what we had in our garden. My husband liked it best with sour cream and even preferred it better the next day. The suggestion to use a skillet-dutch oven turned out to be great! One pan all the way.

Daddy's Sausage and Peppers

Surprisingly good. I didn't have any garlic-flavored olive oil, so I added extra garlic cloves to make up for it. I used Italian sweet sausage and peppers from my garden. I was skeptical at first, but after 45 minutes of cooking, the flavors started to really come together. My husband loved this. Like some others, I also doubled the tomatoes. The other change I made was to cook everything at a slightly higher heat than called for because I love sweet vegetables to be just a bit scorched.
