About this Cook
I was born in VT, raised in TX and have lived in FL for most of my adult life. I have 3 great kids, who I refused to let be picky eaters, so they love pretty much everything I cook, which is good for my ego. (heehee!) I am at a point in my life where I'm trying to figure out what exactly it is that I do best, and it all always comes back to cooking, so I'm trying to focus on that and hopefully discover a way to cook for the masses and make a little money doing it! That would be nice.
My favorite things to cook
I love baking...cupcakes, cakes, pies...anything sweet and yummy that makes you feel like you're getting a special treat, not just the usual meal, like breakfast, lunch or dinner. I do like cooking dinner though, too..I tend to get bored easily with the same old thing when it comes to mealtime, so I end up at All Recipes a LOT!
My favorite family cooking traditions
My mom always loved to have the WHOOOOOLE family over for the holidays, and it never failed, every year we'd be eating dinner when someone would yell, "Oh, no! The rolls!" And they'd be burned, every time. So now every year, just to honor Mom, we always "forget" the rolls... Just like old times, lol. They're lovingly referred to as "Nana Rolls" now.
My cooking triumphs
My latest great success was the Gourmet Mushroom Risotto that I just made tonight! I had never tried it before, much less cooked it, so I was unsure, really, of what to expect. It was AWESOME! I've also made some really pretty cakes and adorable cupcakes! I also like to take credit for the fact that my husband, who never used to like ANYTHING when we first met, now will try just about everything and eats loads of things that he always used to hate! He hated sweets, (can you believe that?!) and now he asks what's for dessert almost regularly. I am under the impression his mother was a lousy cook, in every sense of the word!
My cooking tragedies
I've had more than my share of tragedies! The latest one was this lime and coconut cake I tried making a few days after surgery..that was probably my first mistake, lol..cooking under the influence! I don't know what I did wrong, but the frosting just pooled all in the bottom of the cake plate! Another bad day was my birthday a few years ago..it wasn't my fault, tho..oddly enough, Tropical Storm Danielle was making it's way through our area and the power went out right as I was putting my cake in the oven. :( That was a lousy birthday all around. I didn't even get cake!

White Chocolate Cheesecake with White Chocolate Brandy Sauce
This is my go-to recipe for cheesecake! If I don't want the white chocolate, I just omit it. Same with the sauce. I also use Golden Oreos for the crust. Just zip them thru the food processor and press into the pan. No need for butter or anything because the fat in the centers bind it together if you just press it in. Amazing recipe, thanks for sharing!

Banana Crumb Muffins
After I added an overflowing teaspoon of vanilla, 1/2 teaspoon of nutmeg and a heaping 1/4 teaspoon of cinnamon, and a few tablespoons of chopped walnuts, these were great! I also added an extra banana because really...who wants to bake only 10 muffins? The crumble didn't really come out as such, it melted some into the muffin but that was not a problem for us!

Cream Cheese Frosting II
I needed something quick to throw on a carrot cake I had taken out of the freezer for dessert, so I whipped this up. It's delish!! I probably used 2.5 cups of powdered sugar because I wasn't going to put that little bit that was left in the bag back in the cabinet. It was soft and very spreadable, without being runny, like another poster said. Next time, I will substitute some DaVinci caramel syrup for the vanilla. I know it will be awesome!!
