Grandma's Egg Custard Pie

This is a terrific recipe. I omitted the vanilla. Turned it into a pear custard pie by adding 2 medium pears, peeled and quartered. My friends raved about this pie.

Chai Spice

This is a good blend. I added it to oatmeal cookies so I left out the salt. Next time I will use more cardamom and less pepper. This was really good steeped with black tea.

Cilantro Chili-Lime Cashew Pesto

I made the recipe as written and the cashews were too prominent. It tasted like an herby nut butter. Delicious herby nut butter, but not quite what I was going for. 2nd batch I used 3/4 cup of chili lime cashews and I love it! Omitted the cayenne because it seems there is enough chili in the cashews, grated the zest in addition to the 3 tbsp. of lime juice, and used 1/2 tsp of salt instead of 1 tsp. I think this will be great on roasted potatoes, any meat (fish, chicken, beef...), or just eaten by the spoonful. Yum! Each batch got a bit over 1 pint of pesto.

Orange-Ginger Tofu Triangles

Kale, Swiss Chard, Chicken, and Feta Salad

I used what I had on hand: swiss chard, carrots, celery, fresh mint, asiago cheese. The dressing is really great with the heartier greens. I let the greens soak in the dressing while I cooked the chicken. This is a really good and versatile salad.

Pumpkin-Oatmeal Raisin Cookies

I used fresh roasted butternut squash (leftovers from dinner), decreased the white sugar to 1/2 cup, increased the oatmeal to 2 1/3 cups, and added 1 tsp nutmeg. Delish, and perfect for using up my leftover squash.
