Mom's Zucchini Bread
Excellent zucchini bread recipe. My 4yo and 19mo ate 2 sliced each!!! For my first time, I just substitued 1/2 cup of the oil for unsweetened apple sauce, and omitted the 1/4c sugar b/c 2 c are enough. Everything else was the same (oh and I used about 3c of zucchini) Next time I plan on using 1c of whole wheat flour to 2c regular flour and 1c white sugar and 1c lite brown sugar.

Chicken Souvlaki Gyro Style
First time ever making a chicken souvlaki & tzatziki sauce recipe and it was FANTASTIC!! We generally only eat Greek food while in Northern Virginia and now we don't even have to do that - restaurant quality right in our own home. I thought for sure it would take several tries or several recipes before finding the perfect fit but not at all. I made minor changes: I do not like dill so I didn't use it. I also didn't use mint. However, I compensated for it by using a lot more of the Greek seasoning. I also did not have Rice Wine Vinegar, so after reading several other recipes for the Tzatziki sauce, I used Red Wine Vinegar. It was amazing sauce, absolutely amazing. I marinated the chicken in my homemade salad dressing (not balsamic but still a viniagrette using apple cider vinegar) and the chicken still rocked. I sauteed it in a non stick pan with all the marinade - oh and I marinated it for 24 hours. I served on Naan bread with a small salad of romaine (thinly sliced), red onions (thinly sliced) and tomatoes and we drizzled the Tzatziki on the top. Thank you so much for osting this recipe.
