Downeast Maine Pumpkin Bread

Very yummy!! Substituted 1 cup unsweetened applesauce for the oil and it came out very moist and tasty!

Chicken Makhani (Indian Butter Chicken)

Used lowfat coconut milk and fat free greek yogurt. The yogurt curdled slightly, even though I added it at the end. The taste was excellent though. Oh, I also added a little bit of cornstarch to thicken up the sauce.

BBQ Chicken Calzones

Needed more cheese. Felt like it was lacking something else as well, but I'm not sure what. Definitely do not try to make this with canned chicken breast or it will come out very dry.

The kalamata olives were a bite over powering and added a little bit of a salty flavor. If I were to make his again, I would probably only use 4 or 5 olives instead of 10.

Banana Crumb Muffins

Followed others' suggestions and added 1/2 tsp of vanilla, nutmeg and cinnamon to the wet ingredients. Substituted oil for butter. Upped the amount of cinnamon in the topping from 1/8 to 1/4 tsp. Baked for exactly 18 minutes and they came out perfectly!
