Asian Chicken Salad

To fry the rice noodles, use enough oil (grapeseed or peanut which have high smoke points) to COVER the noodles. Get the oil nice and hot. Put one noodle in. If its puffs and curls within a second or two the oil is ready. Then fry the noodles in small batches, moving them around a bit until they are curled, puffy and lightly browned. Get oil back to temp before adding more batches. Place fried noodles on paper towel to drain. Sprinkle with salt if desired. If you do it this way, frying the noodles is not difficult. In fact its a bit fun.

Cooked Fruit Salad Dressing

To avoid cooked chunks of egg, temper the eggs before adding to the dressing. To do this, put a little bit of dressing into the egg and whisk. Repeat. This will get the egg's temp to match the dressing's and avoid the cooking effect.

Classic Fish and Chips

You will need to keep the oil hotter than 350 to get a crisp coating rather than a soggy one. That goes for both the fish and the chips. I used 370 and all was well.

Curried Cashew, Pear, and Grape Salad

With regard to the cashews: I like subtle Indian flavors, so intead of the curry powder I used 1/2 t. garam masala and 1/2 t. tandoori masala with only 1/8 t. cayenne. The cashews were WONDERFUL--even plain.
