Slow Cooker Chicken Taco Soup

Reviewed: Jul. 11, 2015
Well, this is a keeper! My two-year old really liked this soup, spices and all. I took the original poster's advice and made used her taco seasoning (minus the 1 tbsp. of chili powder--didn't have any). (1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon crushed red pepper flakes 1/4 teaspoon dried oregano 1/2 teaspoon paprika 1 1/2 teaspoons ground cumin 1 teaspoon sea salt 1 teaspoon black pepper). I also didn't have beer or the green chiles, so used chicken stock and omitted the chiles; we didn't miss them. Recipe is very versatile and easy to adapt the canned ingredients to what you have on hand (I subbed kidney beans for black beans). I also just made on the stove top instead of in the crock pot and it was lovely.

Nanaimo Bars III

Reviewed: Jun. 21, 2015
My husband loves these. I omitted the egg and used the microwave to melt the butter for the base and add all of the ingredients listed. I didn't add the ground nuts either. I also doubled the recipe and made 1/2 of the batch into mint Nanaimo bars (just added a little peppermint extract to 1/2 the filling and a tiny a little green food colouring). Instead of baking squares, I used an 8 oz bag of semi-sweet chocolate chips melted with butter.

Quick and Easy Alfredo Sauce

Reviewed: Feb. 15, 2015
We liked this a lot. I didn't have much cream, so needed a recipe I could adapt to make an alfredo sauce. Great in a pinch! I didn't add any milk, just approx. 3/4 c. of cream and 1/4 c. of butter.

Crispy Chipotle Roasted Smashed Potatoes

Reviewed: Feb. 15, 2015
We loved this, however, I did omit the chipotles. Just used the sea salt and a bit of pepper. Really good. Served with lemon/garlic asparagus and filet mignon recipe from Skinnytaste.

Banana Cake VI

This was a good cake. You do need to freeze it immediately to keep the moisture in the cake. I made into cupcakes, which were really nice. I didn't use this frosting recipe.

Hazelnut-Mushroom Pilaf

Reviewed: Feb. 8, 2015
Loved this! I did tweak a little, as I wanted to make like I remembered from years ago. I didn't use orzo, instead using 1 1/2 c. of jasmine rice. I did follow the directions and sautéed the rice, onion, and celery in a pan. I used a can of mushrooms, rather than fresh, and 1/2 c. of cashews instead of hazelnuts, and it was still really good. I did add approx. 1/4 c. of soya sauce to the rice while sautéing. Didn't add the marjoram or the parsley, but didn't miss them. I then put the rice mixture in a pan, added 2 1/2 c. of chicken broth and baked in the oven for approx. 1 hour. Was really delicious! Served with the Baked Pork Chops I Recipe from this site (has a delicious mushroom sauce).

Baked Pork Chops I

Reviewed: Feb. 8, 2015
We really liked this. I took another reviewer's suggestion and did not pan fry these ahead of time, but rather sprayed the pan and the breaded coating of the pork chops, then baked. Does not need 1 h, 30 mins to cook (maybe a little more than 45 mins). Used corn flake crumbs and panko bread crumbs to bread the chops and added some oregano, salt, pepper, garlic powder to the breading and the flour. Left the mushroom sauce on the side; I recommend doubling the sauce amount also. Served with Mushroom Rice Pilaf. So delicious!

Death by Chocolate Mousse

Reviewed: Dec. 24, 2014
Great - was concerned that the filling was a touch runny, so added some chocolate pudding (1/2 a pkg) to the filling. Turned out nicely.

Delicious Apple Sauce

We love lots of cinnamon, so we really liked this. I used white sugar instead of brown (didn't have brown) and lemon juice instead of water. Turned out beautifully.

These were good. Watch timing closely, as easy to dry out if over baked.

Slow Cooker Turkey Breast

Reviewed: Oct. 21, 2014
Didn't use the onion soup mix, but instead used 1 c. of water, a couple tbsp. of butter under the skin of the turkey, poultry seasoning, oregano, sage, and basil plus some garlic, on the skin. Cut up an onion to go on top. This really was a very moist and delicious turkey recipe!

Worked well for us. I blended this in my Magic Bullet. I did add a bit of Safflower oil, which seemed to help thicken this mixture up. I only had to add a few tsps.

Pumpkin Brownies

Reviewed: Sep. 22, 2014
Pretty Good. I actually used the brownie recipe for "Best Brownies" on this site (because I always have great luck with it and we LOVE it). Also, after reading the reviews, a lot of people mentioned they had difficulty swirling the two batters together and I didn't have any trouble doing this with the Best Brownie batter. I doubled the ingredients, except for the cocoa. Added 1/2 c. of pumpkin puree to the half of the batter that did not have the cocoa in it and pumpkin pie spice. Swirled together in the pan. Turned out well. I believe this is a 5 star recipe for those who love pumpkin and chocolate together. I gave 4 stars because we didn't absolutely "love" the combo. However, this is a nice, moist brownie with a pumpkin flavour, if you don't "over-swirl" your two batters together.

Pizza On The Grill I

Reviewed: Sep. 8, 2014
Great Recipe! We took some of the other reviewers' suggestions and made 3 or 4 smaller crusts (makes it easier to flip the crusts). We also cooked on a low temp setting on the BBQ and cooked our crusts on top of tinfoil, rather than directly on the grates of the BBQ. We didn't rub olive oil on the crusts, and they turned out fine. You do want to work quickly when putting on the toppings, having everything ready to go. We pre-cooked most of our toppings, which we highly recommend as it doesn't take the crust long to cook. We used homemade pizza sauce, pre-shredded mozzarella, pre-cooked chicken (cubed), raw spinach leaves, fresh basil leaves, and caramelized onions/garlic. Thanks for a great recipe, Doug!
