Chicken with Quinoa and Veggies

We hadn't tried Quinoa yet and this was a great start! I was a bit worried that it would be dry as there didn't seem to be any "saucy" ingredients, and since I was going to have to use canned diced tomato's, I didn't drain all of the juice off. This was delicious and I'm excited to try it with fresh tomato!

Curried Honey Mustard Chicken

Incredible flavor and SO EASY! I ran out of Curry powder and used Garam Masala in it's place, and will probably make it that way again. I doubled all of the sauce ingrd's so we'd have enough to serve over rice, but didn't double the butter.

Easy Salsa Meatloaf

FANTASTIC! I will never make meatloaf any other way! I use ground turkey, adding 1 tbspn chopped up ancho pepper for some added heat and did add a ketchup glaze/sauce to it 1/2 way thru cooking. Super supper with mashed potato's & a salad.

A WONDERFUL recipe! I didn't have Oat Bran, so I don't know what that would have added to it. I used twice the amount of fruit called for (and could still add more based on preference) and added the fruit (plus coconut) when I stirred the mixture at the mid-cook point. The sweetness is fine for us as is. THANK YOU for sharing such a wonderful recipe! Also - if your measure the oil first (I used grapeseed oil) then your honey and maple suger won't stick to the measuring cup.

Broccoli and Tortellini Salad

I, like many, have made this several times. Here's what I can share - blanche the broccoli in the same pan you're going to cook the pasta in - UNCUT, and quench in the large bowl you'll be mixing in. This will save the water to cook the tortellini in, and makes it easier to blanche and remove the broccoli from the water. I place a towel in the drainer and set the broccoli in it and then start the tortellini. As the tort's are cooking, I move the broccoli heads to a towel to finish draining. Easier to cut this way too! After I quench, and as the broccoli heads are drying, I clean out the large bowl. (This is all while the bacon is cooking on low/medium heat and I am mixing the dressing ingredients.) For the dressing, I take the mayo to 1C, and also use 1/2C Miracle Whip style dressing. Sugar is 1/2C. Apple cider vinegar is at 6 teaspoons - RAW apple cider vinegar. I mix all but 1/2C of dressing with everything but the tortellini (and the bacon has been cut into small pieces with kitchen shears). I then gently toss the frozen tri-color torts and place in the fridge, covered. Just before serving, mix in the rest of the dressing and have some copies of this recipe to hand out. It is that good.

I agree with the others regarding the vodka - it isn't needed. This was EXCELLENT, and a great way to use up some of the cheaper Tequlia we had around the house.

Slow Cooker Chicken Stroganoff

I'm fairly impressed with the flavor given the number of ingredients. I used butter with the chicken, not marg, and also used Golden Mushroom soup instead of the cream of chicken. Didn't change anything else, and won't in the future.

Roasted Asparagus and Yellow Pepper Salad

Made this for dinner tomorrow, and I keep sneaking bites! YUM! Having made this a couple of times, I do cut the Olive Oil & Dijon in half, and I also roast all of the veggies (including the onion-helps cut down the bite), individually, to get the cooking time right. Instead of sprinkling the olive oil on the veg's, I throw them into a plastic bag, add oil, shake to coat and dump into the pan for roasting. This and the "Winter Fruit Salad with Poppyseed Dressing" from this site are the BEST SALADS EVER.

Simply outstanding. I could have probably eaten a entire pie myself. I didn't see the need to dirty a lot of bowls, so I mixed the spinach and meat mixtures together, and then topped with the cheese and egg mixture.

Award Winning Chili

YUMMY! I usually make a 24 serving batch and freeze the rest. When making that amount, I add an extra can of diced tomato and a can of tomato sauce. I also use the Chili Seasoning Mix II from this site instead of store packaged mix.

Quick Creamy Potato Soup

REALLY good. I added chopped celery and cooked them with the onions in the bacon grease (that step has a LOT to do with the great flavor). I also lowered the milk to 1.5Cups, added a cup of sour cream and stirred in 1C of Cheddar just before serving. EVERYONE loved it, and the leftovers were great too. Adding to original review: I was short on time, so I didn't cube the potatoes (just cut into big chunks), but right before adding all the creamy ingrd's, I used a potato masher to smoosh up the softened potatoes. Worked GREAT, and made the soup nice and thick! Also, I've saved some bacon grease so when I don't want to use (or have) bacon, I just use the grease when cooking the onions and still get the great flavor!

Grilled Chicken Thighs Tandoori

This was amazing!!! It didn't say if I was supposed to remove the skin, but I did as I only had 6 hours to marinate. The best grilled chicken on the grill I've ever had, and everyone really liked it, and the rest of this family is not a fan of meat with bones in it. (So annoying)

Mini Meatloaves

The meat mixture is the best I've found, however, I like to use the sauce from the Brown Sugar Meatloaf recipe, which is basically just Ketchup & brown sugar in equal parts...and LOTS of it so you have some for the mashed potato's that HAVE to be made with this.

LOVE it! I didn't have 2 cans of Cream of Potato Soup, so I used a can of the Fiesta Cheese Soup and a can of Cream of Celery - it was wonderful!

Lazy Lasagna II

What a great shortcut! I used Sausage instead of hamburger, and didn't thaw the ravioli's we had (missed that when reading). I used 2 jars of sauce, otherwise it would've been too dry (for us). The family LOVED this!

Winter Fruit Salad with Lemon Poppyseed Dressing

This has been the only salad I'm allowed to bring to family gatherings for several years. I certainly don't mind-it's easy to make and healthy. I don't pour all of the dressing on the salad...the extra dressing left I use to marinate pork tenderloins later in the week for dinner.
