Mango Tango Black Bean Salsa

This is FANTASTIC! I made this for my son's 3rd b-day party, and it was gone in minutes, mostly due to my son eating great amounts of it! A perfect BBQ side dish as well, and, it makes a yummy relish for grilled chicken & fish. Updated: I now also add 1 tsp Red Wine Vinegar, double the cumin, a generous squeeze of lime, and a tsp of sea salt.

Strawberries and Wine

Not bad. Next time, I will use a sweeter wine (Peisporter maybe) than Chardonnay. It made the strawberries somewhat bitter. Also, I may try using powdered suger instead of granular. The wine was delicous!

Spinach and Potato Frittata

Pasta Bake

Very yummy & very easy! The only changes I made were to added about 4 cloves of garlic, and fresh mushrooms. I can't wait to make this again. My 3yr old & 10 month old both devoured this.

Chicken Pot Pie IV

This is an instant favorite in our home. I didn't have any chicken breast thawed out, so I used a can of precooked chicken (10 oz I think) and it was perfect! You could also use left over turkey. Next time I will add a can of mixed veggies as well. Both my 3 yr old & 1 yr old ate a ton of this-NO left overs. I'll make two next time!

Barbecue Tofu Sandwiches

It may be that because I don't eat vegetarian all the time I am not used to Tofu...basically, I could've passed a bottle of BBQ sauce around the table, and had the same effect, except the cooked product was warm. As I was trying to brown the tofu, it crumbled, and never really did become "Golden". It sure makes the house smell like something good is for dinner....yuck!

Burgundy Pork Tenderloin

VERY tasty, tender and delicious. The only problem I had was making the gravy, but that may be due to my own incompitence! The entire family loved this (1yr, 3yr and Daddy), and the leftovers are yummy too. I have made this several times, and will continue to....

Chicken Francese for One

I used freshly grated cheese, followed the recipe exactly, and ended up throwing the "sauce" away. The chicken breasts cooked in the butter & lemon juice alone was pretty tasty. This won't be staying in my recipe box.

Cottage Cheese Roast

I tried this three different times, which was two times too many. Maybe I'm to used to the texture & flavor of meat. The cook time was way longer than suggested & I ended up finishing it in the microwave because the children had been waiting for so long.

Easy Mashed Potato and Roasted Vegetable Enchiladas

FAN-FRICKIN-TASTIC! Both my husband & I loved these. I've made these twice now, once with instant, once w/home made mashed potatoes. This recipe is MUCH better if you use home made, and don't completely mash the taters (and leave the skin on!). It adds great texture. We eat these with a Hot & Sweet sauce & ALWAYS make double batches and freeze for a quick lunch (or snack!).

Chocolate Cake Surprise

I have made this cake TWICE this weekend at the request of my son, husband & MIL. The first time, after baked, the cake mix "enveloped" the cream cheese mixture, and wasn't as tall after cooling. The second time, the cream cheese pretty much stayed on top. BOTH times, it was EXCELLENT! So easy, so good...

Hash Brown and Pork Chop Casserole

Fantastic Black Bean Chili

This recipe made as-is is pretty good. Now, I added a can of Diced Tomatoes, a 4 oz can of green chiles, a tsp of cumin and some undetermined amount of chili powder. I served it with Cornbread muffins & topped chili with cheddar cheese & a bit of sour cream. YUM! Mom, Dad & 3 yr old loved it. I got a "your the bestest cooker in the world"from my son...the best compliment!

Mexican Casserole

FANTASTIC with both hamburger & chicken. (I used a can 14.5oz of precooked chicken to save even MORE time.) Next time I may add refried beans. Rather than putting the chips on top, I serve them on the side. This way, the kids think they're eating an appetizer, or at least something other than dinner! Thanks for sharing.
