Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Jul. 4, 2006
This has been the only salad I'm allowed to bring to family gatherings for several years. I certainly don't mind-it's easy to make and healthy. I don't pour all of the dressing on the salad...the extra dressing left I use to marinate pork tenderloins later in the week for dinner.

DOUBLE the sauce for this recipe, and freeze it. NOT healthy but REALLY good!

Chai Tea Mix

This, in small jars with hinged lids, made a great companion gift with the Pumpkin Bread IV from this site. (I only used 2C sugar - too sweet w/2.5C)Very tasty!

Turkey Breast and Sweet Potatoes

Reviewed: Dec. 1, 2005
I didn't have an oven bag, so I missed out on what would have been some excellent gravy. Otherwise, this was wonderful. The sweet potatoes had a great flavor, and the turkey tasted GREAT! I don't think the apples really contributed much though, so I may leave those out next time.

Easy Cajun Jambalaya

Reviewed: Oct. 23, 2005
Great flavor & consistency. I followed the recipe exactly and the ONLY thing I would change is to add some sort of tomatos...maybe with the chilies in there.

Mexican Casserole

Reviewed: Mar. 22, 2005
FANTASTIC with both hamburger & chicken. (I used a can 14.5oz of precooked chicken to save even MORE time.) Next time I may add refried beans. Rather than putting the chips on top, I serve them on the side. This way, the kids think they're eating an appetizer, or at least something other than dinner! Thanks for sharing.

I wasn't warned that this is addictive. Where do I go for a support group? This is FANTASTIC! The longer it chills before serving, the better. So easy....

Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: Jun. 16, 2003
Quick, it is not if you follow the recipe. I used canned chicken instead. It turned out soupy, but the flavor was good. The kids loved it. The hubby & I say it wasn't that great...

Fantastic Black Bean Chili

Reviewed: Feb. 23, 2003
This recipe made as-is is pretty good. Now, I added a can of Diced Tomatoes, a 4 oz can of green chiles, a tsp of cumin and some undetermined amount of chili powder. I served it with Cornbread muffins & topped chili with cheddar cheese & a bit of sour cream. YUM! Mom, Dad & 3 yr old loved it. I got a "your the bestest cooker in the world"from my son...the best compliment!

Hash Brown and Pork Chop Casserole

YEAH! I would definitely recommend adding Worsteshsire sauce when browning the chops. Stick to your ribs kind of cooking.

Chocolate Cake Surprise

Reviewed: Feb. 23, 2003
I have made this cake TWICE this weekend at the request of my son, husband & MIL. The first time, after baked, the cake mix "enveloped" the cream cheese mixture, and wasn't as tall after cooling. The second time, the cream cheese pretty much stayed on top. BOTH times, it was EXCELLENT! So easy, so good...

Easy Mashed Potato and Roasted Vegetable Enchiladas

Reviewed: Jan. 10, 2003
FAN-FRICKIN-TASTIC! Both my husband & I loved these. I've made these twice now, once with instant, once w/home made mashed potatoes. This recipe is MUCH better if you use home made, and don't completely mash the taters (and leave the skin on!). It adds great texture. We eat these with a Hot & Sweet sauce & ALWAYS make double batches and freeze for a quick lunch (or snack!).

Cottage Cheese Roast

Reviewed: Nov. 22, 2002
I tried this three different times, which was two times too many. Maybe I'm to used to the texture & flavor of meat. The cook time was way longer than suggested & I ended up finishing it in the microwave because the children had been waiting for so long.

Chicken Francese for One

Reviewed: Nov. 22, 2002
I used freshly grated cheese, followed the recipe exactly, and ended up throwing the "sauce" away. The chicken breasts cooked in the butter & lemon juice alone was pretty tasty. This won't be staying in my recipe box.

Burgundy Pork Tenderloin

Reviewed: Oct. 4, 2002
VERY tasty, tender and delicious. The only problem I had was making the gravy, but that may be due to my own incompitence! The entire family loved this (1yr, 3yr and Daddy), and the leftovers are yummy too. I have made this several times, and will continue to....

Barbecue Tofu Sandwiches

Reviewed: Oct. 4, 2002
It may be that because I don't eat vegetarian all the time I am not used to Tofu...basically, I could've passed a bottle of BBQ sauce around the table, and had the same effect, except the cooked product was warm. As I was trying to brown the tofu, it crumbled, and never really did become "Golden". It sure makes the house smell like something good is for dinner....yuck!

Chicken Pot Pie IV

Reviewed: Aug. 22, 2002
This is an instant favorite in our home. I didn't have any chicken breast thawed out, so I used a can of precooked chicken (10 oz I think) and it was perfect! You could also use left over turkey. Next time I will add a can of mixed veggies as well. Both my 3 yr old & 1 yr old ate a ton of this-NO left overs. I'll make two next time!
