Gingered Sweet Potatoes

The Ginger brings such a TASTY zing to the sweet potato's! I had to change things around to make it work for me. I melted the butter in a sauce pan (NO OLIVE OIL), added all ingredients except for the sweet potato's (PLUS 1 TEASPOON VANILLA) and then put the sliced up potato's in and coated them. Poured all of it into a 9x9 glass baking dish, covered it, and stuck it into the fridge until about an hour before it was time to eat. Once removed from the fridge, I stirred again, baked at 350 (stirring halfway thru cooking time) for almost an hour. This allowed me to prep the dish way earlier in the day, and it was SOOOO easy & SOOO good! Yes, a bit sweet, but that's how they're supposed to be!

Slow Cooker Stuffing

Not the most appealing stuffing to serve, but the flavor is FANTASTIC!!! I wasn't a big mushroom fan, but tried it with Baby Bella's, and it added a wonderful rich flavor. I use seasoned dryed cubes (bag) and add only poultry seasoning. I prepare it the night before (minus the eggs), and then put it all together in the morning, cook on low and check for moistness every hour.

Chicken with Mango-Tomato Salsa

This was very fresh tasting, but a bit heavy on the tomato content. I did add a teaspoon of cumin to the salsa, more red onion, and salt & pepper to taste. We pan fried the chicken in olive oil, and seasoned with Smoked Paprika, salt & pepper. I will make this again, but with only one can of tomato. We don't have canned Mango in Nebraska, but we do have it jarred in the chilled produce section. UPDATE - tried this again with only one can of diced tomato, and served it with sliced avocado on the side - PERFECT!!!

Lemon Pepper Green Beans

The green beans in the produce dept. looked like spinach, so I bought and used a "steamer" bag of green & yellow beans. Those cooked in the microwave while I prepared the almonds. FANTASTIC flavor and super easy. I doubt I'll ever try with fresh beans as it will take more prep time. I thought the amount of lemon pepper was fine.

Sour Cream Pork Chops

A decent "base" recipe, but it would've been quite bland. I added smoked Paprika to the flour mixture and also sprinkled it directly on the meat before I browned it (I used a Pork Shoulder roast) . To the sauce, I added 2 tsp's Worst. sauce and a can of Cream Mush. Soup. When it came time to add the sour cream, I added a tablspoon of cornstarch to the s.c. and while that was in the crock pot, I sliced up the meat, added it back to the sauce and then served over Egg Noodles. It turned out a lot like a stroganoff.

Curried Honey Mustard Chicken

Incredible flavor and SO EASY! I ran out of Curry powder and used Garam Masala in it's place, and will probably make it that way again. I doubled all of the sauce ingrd's so we'd have enough to serve over rice, but didn't double the butter.

Outrageous Warm Chicken Nacho Dip

I doubled this, using one can mild Rotel, one hot, and ground beef instead of chicken. Also added spicy Velveeta (the entire block), Chipotle Taco seasoning, sautéed red onions instead of green, can of Green Chiles instead of Jalapeno and a very large can of black beans.

Easy Salsa Meatloaf

FANTASTIC! I will never make meatloaf any other way! I use ground turkey, adding 1 tbspn chopped up ancho pepper for some added heat and did add a ketchup glaze/sauce to it 1/2 way thru cooking. Super supper with mashed potato's & a salad.

Creamy California Guacamole

I made this following the recipe exactly and thought it seemed a bit too creamy and light. I added another Avocado, chopped red onion, cilantro and garlic-then it was Guacamole perfection!!! I guess it was no longer California Guac, but Nebraska Guac!

A WONDERFUL recipe! I didn't have Oat Bran, so I don't know what that would have added to it. I used twice the amount of fruit called for (and could still add more based on preference) and added the fruit (plus coconut) when I stirred the mixture at the mid-cook point. The sweetness is fine for us as is. THANK YOU for sharing such a wonderful recipe! Also - if your measure the oil first (I used grapeseed oil) then your honey and maple suger won't stick to the measuring cup.

Broccoli and Tortellini Salad

I, like many, have made this several times. Here's what I can share - blanche the broccoli in the same pan you're going to cook the pasta in - UNCUT, and quench in the large bowl you'll be mixing in. This will save the water to cook the tortellini in, and makes it easier to blanche and remove the broccoli from the water. I place a towel in the drainer and set the broccoli in it and then start the tortellini. As the tort's are cooking, I move the broccoli heads to a towel to finish draining. Easier to cut this way too! After I quench, and as the broccoli heads are drying, I clean out the large bowl. (This is all while the bacon is cooking on low/medium heat and I am mixing the dressing ingredients.) For the dressing, I take the mayo to 1C, and also use 1/2C Miracle Whip style dressing. Sugar is 1/2C. Apple cider vinegar is at 6 teaspoons - RAW apple cider vinegar. I mix all but 1/2C of dressing with everything but the tortellini (and the bacon has been cut into small pieces with kitchen shears). I then gently toss the frozen tri-color torts and place in the fridge, covered. Just before serving, mix in the rest of the dressing and have some copies of this recipe to hand out. It is that good.

Almond French Toast

VERY tasty!!! We also didn't refrigerate, but instead placed the toast in the freezer for about 15 minutes. (Who wants to wait another hour!?!) The first time we had about 1/2 of the almonds called for, and really wouldn't like it with anymore than that.
