Lime-Curry Tofu Stir-Fry

A great recipe - full of flavor! I do add garlic with the ginger and curry paste, and an extra tblspn of Maple Syrup (a sorta picky 8 yr old). I also sub 2 tblspn's fish sauce for the soy, add a tsp of salt, and add a yellow squash in place of one of the zucc's. This is FANTASTIC!!!

Asparagus Chicken Fajitas

Wonderful flavor, with some additions. I added 1 tsp cumin & 1 glove garlic (omitted the garlic salt) and 1/4 tsp Chipolte Powder when adding the veggies, along with more red onion than called for. I served it with Guacamole, hot sauce, sour cream and some cilantro. I had made spicy black beans for a side (1 can black beans drained and rinsed, 1/4 chicken broth, 1.5 tsp adobo sauce all heated and mashed together) but ended up putting the black beans into the tortillas. I will make this over and over and over again. The asparagus added a nice texture, but I won't be upset if I don't have it on hand.

Braised Balsamic Chicken

Pretty good! I've made this twice, and both times I doubled everything but the chicken. (I use fresh garlic) The second time, I also added 1/2C of chicken broth (with some corn starch) and it was FABULOUS! Not quite as much bite, and the corn starch helped thicken the sauce a bit. The second time I also sliced the chicken into strips, and will do so again in the future. This recipe is a keeper, and I hope to try it this summer with fresh herbs. Also, I've tried it with both rice & egg noodles - rice was better.

Chicken Scampi II

Great base recipe - I added a pepper mix (red/yellow), 1/2C white wine and a bit of cornstarch to thicken it up. Served tossed with Linguine and salad.

Oven Fries

Had to double the amount of oil, and used a plastic bag to coat everything. I am going to try this with sweet potato's next. These did crisp up nicely and the flavor was good. I also lined the pan with parchment paper.

Bourbon-Mango Pulled Pork

W O W! I held back one of the tspn's of Chili powder as we had young kids also eating this, and used jarred Mango from the produce sectcion. Since I didn't have any pits to add, I substituted some of the juice from the mango's for the water in the cooking of the pork. The flavor was absolutely incredible! I served it with a Mango Coleslaw recipe from CookingLight.com, and it was a meal to remember! I had to stop my husband & son from eating it all so we would have leftovers for lunch.

Spiced Sweet Roasted Red Pepper Hummus

mmmmm GOOD! I did add a tsp of Olive Oil. While rinsing the beans, you may want to take the time to gently rub them between your hands to remove the "skins" on them. It (IMO) makes a big difference in the flavor and texture.

Peanut Butter Balls III

Used 3C Powdered Sugar, 1/2 crunchy 1/2 smooth and a mix of semi & milk chocolate chips - also chilled the batter overnight before rolling into balls, and then chilled again before dipping in chocolate. YUMMMMMMMMMMMMMMMY! Very rich!

Margie's Sour Cream Pork Chops

I used 3 tblspns white vinegar, 1 can of broth, and Italian seasonings in place of the savory (didn't have it and we were snowed in) 1tsp of Worst sauce, and also added a teaspoon of Cornstarch before pouring the sauce mixture over the chops. Served over egg noodles. When I have the chance, I'll use Savory, but it turned out DELICIOUS! The entire family approved so it will go into the favorites rotation. VERY quick and easy to prepare.

Pumpkin Turkey Chili

I love this chili, after I make the following changes (too bland & thick otherwise): Add - 1 can chicken broth, 1 can black beans, 1 can kidney beans, 1 can diced tomato (2 total), 2 tbls Cumin, 1/2 tsp cayenne, 1 can diced green chilies. All of it goes into the crock pot where the perfect chili is created!

Gingered Sweet Potatoes

The Ginger brings such a TASTY zing to the sweet potato's! I had to change things around to make it work for me. I melted the butter in a sauce pan (NO OLIVE OIL), added all ingredients except for the sweet potato's (PLUS 1 TEASPOON VANILLA) and then put the sliced up potato's in and coated them. Poured all of it into a 9x9 glass baking dish, covered it, and stuck it into the fridge until about an hour before it was time to eat. Once removed from the fridge, I stirred again, baked at 350 (stirring halfway thru cooking time) for almost an hour. This allowed me to prep the dish way earlier in the day, and it was SOOOO easy & SOOO good! Yes, a bit sweet, but that's how they're supposed to be!

Slow Cooker Stuffing

Not the most appealing stuffing to serve, but the flavor is FANTASTIC!!! I wasn't a big mushroom fan, but tried it with Baby Bella's, and it added a wonderful rich flavor. I use seasoned dryed cubes (bag) and add only poultry seasoning. I prepare it the night before (minus the eggs), and then put it all together in the morning, cook on low and check for moistness every hour.

Chicken with Mango-Tomato Salsa

This was very fresh tasting, but a bit heavy on the tomato content. I did add a teaspoon of cumin to the salsa, more red onion, and salt & pepper to taste. We pan fried the chicken in olive oil, and seasoned with Smoked Paprika, salt & pepper. I will make this again, but with only one can of tomato. We don't have canned Mango in Nebraska, but we do have it jarred in the chilled produce section. UPDATE - tried this again with only one can of diced tomato, and served it with sliced avocado on the side - PERFECT!!!

Lemon Pepper Green Beans

The green beans in the produce dept. looked like spinach, so I bought and used a "steamer" bag of green & yellow beans. Those cooked in the microwave while I prepared the almonds. FANTASTIC flavor and super easy. I doubt I'll ever try with fresh beans as it will take more prep time. I thought the amount of lemon pepper was fine.

Sour Cream Pork Chops

A decent "base" recipe, but it would've been quite bland. I added smoked Paprika to the flour mixture and also sprinkled it directly on the meat before I browned it (I used a Pork Shoulder roast) . To the sauce, I added 2 tsp's Worst. sauce and a can of Cream Mush. Soup. When it came time to add the sour cream, I added a tablspoon of cornstarch to the s.c. and while that was in the crock pot, I sliced up the meat, added it back to the sauce and then served over Egg Noodles. It turned out a lot like a stroganoff.
