Chicken with Quinoa and Veggies

We hadn't tried Quinoa yet and this was a great start! I was a bit worried that it would be dry as there didn't seem to be any "saucy" ingredients, and since I was going to have to use canned diced tomato's, I didn't drain all of the juice off. This was delicious and I'm excited to try it with fresh tomato!

Vegetable Beef Soup I

A very good base recipe. I did sear the meat, and used V-8. Next time, I will add additional spices and more veggies to add some complexity - some red wine, worst sauce and maybe a packet of stew seasoning mix...

Slow Cooker Cranberry Pork

I also added a packet of Onion Soup mix, and doubled the Cranberries (whole kind, not the pure jeelly stuff) and dressing. Served with oven roasted potatoes - YUMMMMM!!!

Raspberry Walnut Baked Brie

Pretty good. Seems like it may be missing something... we used floss and sliced it in half, added filling and then also topped the brie before baking.

Easy Bacon and Cheese Quiche

This turned out great and my 10 yr old DD did all of it except cook the bacon (we used fresh, not canned). We also made this and used Smoked Gouda & added mushrooms and it was fantastic!!!

Curried Chicken Fruit Salad

Pretty tasty! I think it could have used some chopped red onion. If you're making this for entertaining, I would recommend red grapes over green for the visual factor.

Slow Cooker Chicken Taco Soup

A very affordable meal that tastes GREAT! To save even more time, I used two cans of precooked chicken and cooked on high for 3 hours. I used chicken broth instead of beer (did try it once and didn't care fore it), the recommended taco seasoning from this site (AWESOME!!!) and also added a bag of frozen 3 pepper & onion mix instead of the chopped onion. This gave the soup more substance, and was even QUICKER to make!

Quick and Easy Mexican Chicken

This is one of our favorite meals! I do add a can of drained & rinsed black beans and a can of green chilies. The last time I made it, I was out of cheddar, but had some velveeta with chilies. I sliced that and placed on top. It added a creaminess that I LOVED!!! I've made this again, and have added frozen corn and lime juice. I definitely recommend the lime juice!

Angel Chicken Pasta

Added 1C chopped Mushroom, 2 cloves Garlic, a frozen bag of 3 pepper & onion blend, upped the wine to 1C, and used a full 8oz of Cream Cheese. Sauteed the Mushrooms, veggies, Garlic & Chicken for a few minutes before add the rest of the ingrd's and then stuck it in the oven until the noodles were ready. Seriously - this was heaven on a plate!

Avocado Tzatziki

I've made this a couple of times with the following changes - 1C Greek Yogurt, 1/2C Cilantro & 1/4C Mint. Instead of Red Pepper flakes, I've used Cayenne, but more recently tried a Jalapeno pepper (seeded) and that was the recipe I'll forever use. Everything goes into the blender. SO GOOD ON EVERYTHING!!!

Hamburger Potato Casserole

Had I stayed with the recipe, this would have been horribly bland. I added 2 cloves of minced garlic, 2 tsp of Worst. Sauce, didn't peel the potato and used ground turkey. Instead of layering, I decided to mix all of the ingredients together before putting it in the oven. Covered with foil, after one hour I added the cheese, cooked for 15 minutes (uncovered) and removed and let it sit for about 10 minutes. The sauce was a tad thin, but OK. Served with hot sauce, green beans and salad. I'll make it again as it's economical and tasted decent after the extra's I added. I may add peppers next time. UPDATED: Added a bag of frozen green beans before baking and we all really liked that!

Suki's Spinach and Feta Pasta

This was pretty tasty! I had to use frozen spinach and halved cherry tomato's (on hand). I also added chopped red bell pepper and essentially doubled everything except the pasta. Next time I may try to melt the feta with some chicken broth in a seperate pan to make it a bit smoother. We will make this again!

Maple Bacon Pancake

We made this, but doubled it so we'd have leftovers to reheat later in the week for breakfast. I didn't add the sugar, but will next time (only half though) and I mixed most of the crumbled bacon into the mix, along with a bit more than half of the cheese. I would not have liked it with all of the bacon and that much cheese on the top. GREAT flavor, and so easy. This will be made again & again! The flavor was wonderful after letting it sit for 2 days! Adding: I did add 1/8C sugar, and I was surprised at the extra ligt bit it added to the flavor. I have also cooked this at 375, and make sure you use a non-stick spray before pouring mixture into your dish.

Balsamic Roasted Pork Loin

I did add sliced onion and diced garlic to the pan in addition to doubling the sauce ingredients. I seared the meat before putting it in the oven. INCREDIBLE!!!

Pork, Pear and Walnut Salad

Pretty darn good! I added fresh garlic to the pork when cooking, and used the Maple-Balsamic Vinaigrette dressing recipe, which is a perfect combination of sweet & tangy! I also added sliced avocados, Craisins and Feta.

Zucchini and Potato Bake

The flavor (AND SMELL!) was outstanding! I also added two small sweet onions and garlic. I do wish I had sprayed my cooking dish to prevent sticking, and next time I won't stir. I will make this tons during fall/winter/spring.
