Pesto Tuna Salad with Sun-Dried Tomatoes

Pretty darn tasty! I added roasted red peppers and garlic to the mix, and served on artisan bread with a slice of a nice white cheese, lettuce and tomato. It looks (and tastes) like something from a fancy cafe!

Mexican Spaghetti Sauce

Absolutely a 5 star with a few changes: Skip the rinsing of the meat - why??? I used Fire Roasted Diced Tomato, Trader Joes roasted corn, added a chopper Adobo chile, an extra can (8oz) of tomoato sauce, a packet of Taco Seasoning and 2 tsp of ground Cumin. Enough for two meals, and it freezes splendidly!

Coconut Tofu Keema

A decent start. Based on personal preference, I made the following changes: I drained the tofu, cooked it in roasted peanut oil, and added the garlic & onion during the last few minutes. I cut the cumin back to 2 tsp's, and next time I will omit it all together - it really didn't belong. I increased the curry to one tablespoon, and also added a tablespoon of Garam Masala. I used a can of tomato sauce, and also a can of fire roasted tomato's instead of all of the tomato sauce this calls for. Last but not least, I put the peas in frozen and they were fine by the time this simmered for a bit.

Spicy Chipotle Turkey Burgers

I did follow another's suggestion and added an egg, fresh garlic and roasted red pepper. I also put the patties on parchment paper on a cookie sheet in the freezer for about 20 minutes. This really helped the patties stay firm and not fall apart during grilling. These were great and next time I will make a double batch and freeze the patties.

Chipotle Mayo

An excellent start! Like others, I added lime juice, cilantro, garlic and instead of mayo, I used Greek yogurt. Next time I'll add some sea salt as well. DELISH!!!

One - Two - Three - Mexican Macaroni Salad

Great starter recipe - I added two tsp's Chipolte Chili power, shredded sharp cheddar and a tsp of cumin. Next time, I'll probably add black beans, corn, maybe some roasted red peppers. Very easy to make this your own!

Vegetable Shepherd's Pie

Based on other reviews, I didn't add the tomato sauce, and instead added 1 cup of Jamaican Jerk Sauce. Next time I'll do the same, but I will try a different bean - we didn't care for the kidney beans in this.

Fiesta Chicken and Black Bean Enchiladas-dup

I had everything I needed for this-however, the veggies were frozen (a three pepper onion mix), and so was the corn. I cooked that while the chicken was cooking, and also added cumin and chipolte powder, along with 1 cup salsa and a tablespoon of lime juice. This came together quickly and was very fresh tasting - thanks!

Zesty Slow Cooker Chicken Barbecue

Made this with a Raspberry Chipolte sauce and used dry Italian dressing seasonings as I didn't have the liquid on hand. LOVED IT!!! I did skip adding the brown sugar because the sauce already had a bit of sweetness to it.

Maple Glazed Chicken with Sweet Potatoes

We LOVED it!!! I doubled it so we would have leftovers, and also added a couple tablespoons of butter when mashing the sweet potatoes. It doesn't specify as to use real Maple Syrup or not, but that's what I used. Thanks for sharing!!!

Curried Tuna Melt

Definitely a keeper, however, I tripled this, hoping for lunch leftovers - there was one (of 8) left from a family of four. I doubled the curry, and also added a tomato under the cheese. We used extra sharp cheddar for some, and jalapeno cheese for others - cheddar was better. We didn't have raisins, so we instead used Craisins. Very, very tasty. Adding: I now serve this on french bread slices, we like that better than the english muffins.

Pesto Chicken

To add more flavor, I pounded the chicken out and made a filling of feta, roasted red peppers, garlic, pepper and finely chopped mushrooms. I coated the inside with pesto first, then filled it and covered the tops with salt, pepper, pesto and then the prosciutto. AWESOME!!! ADDING: After making this several times, I don't care for the texture of the Prosciutto after cooking. Now, I coat the outside of the chicken w/Pesto, S & P. Then on the inside, I do Pesto, S & P, Prosciutto, then the filling. Fold and cook. PERFECTION!!!

Baked Chicken Nuggets

Fantastic! I'm working on replacing the processed food we used to turn to, and these are a wonderful replacement for chicken nuggets in a bag. In fact, all I did was cut the chicken and the 9 yr old did everything else. I used two egg whites instead of butter, added a dash of onion and garlic powder to the breading and a healthy bit of fresh black pepper. (There was lots of breading left, but not ONE piece of chicken was left over).
