Roasted Beets and Sauteed Beet Greens

This was fantastic! I did have issues trying to remove the peel after they were cooked. Next time I won't bother - I don't with potatoes. The picky 12 year old liked them as well - that's huge!

Mom's Baked Egg Muffins

Fabulous!!! We didn't have Heavy Cream, so we used Half & Half, and also didn't cut the crusts off - it added a nice texture! We will make these again & again and again...

Easy, Cheesy Tortellini Bake

Fabulous and easy. Based on experience, I didn't pre-cook the tortellini, and instead just mixed everything in one big pot, spread into the 9x13, and put it into the oven. I also didn't have spinach, so I instead used a bag of three pepper & onion mix I had in the freezer.

Turkey Macaroni Bake

I added a can of drained, diced tomato's, a bag of frozen 3 pepper onion blend, 1 tablespoon of the Italian Seasoning II from this site and used shredded swiss instead of cheddar. I did cook the noodles for a 4 minutes, used cream of mushroom and 1/2 C sour cream instead of milk. So, yeah, I totally changed it, and it was good!!!

Tim's Green Bean Casserole Extraordinaire

Some loved it, some did not. It was VERY rich, and a little too thick. Next time, I will replace 1 C of the sour cream with milk. I also used frozen green beans as I like the texture better than canned.

Biscuit-Topped Chicken Pot Pie

Knowing that we wanted leftovers, I added to this recipe and cooked it in a 9x13 dish. I boiled just over a pound of chicken breasts, and while that was cooking, I mixed the following: 1 can cream potato, 1 can cream broccoli, 1 can sliced potato (drained), 16 oz frozen veggies, 1 cup milk, 3/4 tsp thyme, 1/2 cup cheddar, 1 cup sour cream, a good dash of onion powder, garlic powder, smoked paprika and a generous amount of fresh ground black pepper. Once the chicken was done I chopped it and added to the rest of the ingredients. Cooked until bubbling and topped with biscuits as stated. I'd write and post this as its own recipe, but the ones I have posted have never been published, so there it is.

Creamy Chicken Casserole

I mistakenly bought the family size of the rice, but decided to make it all. I used a can of cream of mushroom soup as a sub for 1 cup of the sour cream. I also added 2 cloves of garlic and used the french onions. We LOVED IT! Great for my hangover!

Classic Goulash

We LOVED this. I used a recipe from this site for the Italian seasoning, did Worst. sauce instead of soy, added a bag of frozen 3 pepper & onion blend and added a tablespoon of Red Wine Vinegar. I had grnd. round, and used whole wheat pasta. Enough left for a couple of lunches and froze enough for another dinner. UPDATING: Having made this several times, I now know NOT to cook the pasta as long as suggested - unless you want a nasty consistency when leftovers are reheated. Starting checking for doneness after 10 minutes.

Four Cheese Margherita Pizza

Y U M. We did make a few changes - used pesto, not olive oil and didn't marinate the tomato. Added cracked pepper to the pesto, a little less basil since there was already basil in the pesto, heirloom tomato (I find roma's have very little flavor) and fresh mozz cheese, not shredded. The biggest change? We used naan for the crust and it was FABULOUS!!!!

Pesto Tuna Salad with Sun-Dried Tomatoes

Pretty darn tasty! I added roasted red peppers and garlic to the mix, and served on artisan bread with a slice of a nice white cheese, lettuce and tomato. It looks (and tastes) like something from a fancy cafe!

Mexican Spaghetti Sauce

Absolutely a 5 star with a few changes: Skip the rinsing of the meat - why??? I used Fire Roasted Diced Tomato, Trader Joes roasted corn, added a chopper Adobo chile, an extra can (8oz) of tomoato sauce, a packet of Taco Seasoning and 2 tsp of ground Cumin. Enough for two meals, and it freezes splendidly!

Coconut Tofu Keema

A decent start. Based on personal preference, I made the following changes: I drained the tofu, cooked it in roasted peanut oil, and added the garlic & onion during the last few minutes. I cut the cumin back to 2 tsp's, and next time I will omit it all together - it really didn't belong. I increased the curry to one tablespoon, and also added a tablespoon of Garam Masala. I used a can of tomato sauce, and also a can of fire roasted tomato's instead of all of the tomato sauce this calls for. Last but not least, I put the peas in frozen and they were fine by the time this simmered for a bit.

Spicy Chipotle Turkey Burgers

I did follow another's suggestion and added an egg, fresh garlic and roasted red pepper. I also put the patties on parchment paper on a cookie sheet in the freezer for about 20 minutes. This really helped the patties stay firm and not fall apart during grilling. These were great and next time I will make a double batch and freeze the patties.

Chipotle Mayo

An excellent start! Like others, I added lime juice, cilantro, garlic and instead of mayo, I used Greek yogurt. Next time I'll add some sea salt as well. DELISH!!!
