Shrimp Po' Boys

I was craving fried shrimp and had some sourdough rolls left. I came across this recipe. Yummy. I used frozen deveined shrimp and subbed cornmeal for the breadcrumbs. I used what I had on had for filling the po' boy: lettuce mix, tomatoes, and skipped thee horseradish for the remoulade. This was better than the neighborhood fried fish joint. Dipped the po'boy in some leftover remoulade with hot sauce.

Banana Nut Bread I

This smelled so good while cookies in the oven. I took the suggestion from JANICER8 and reduced the sugar by 1/2 cup, used pecans, and 1/2 brown sugar 1/2 white sugar. I used unbleached flour and may need to add more moisture next time to get the same results as the other reviewers. It tasted really good, I hardly want to give away the second loaf.

Asian Glazed Chicken Thighs

I marinated the chicken thighs for about 7 hours. I followed the suggestions of others; boiling the reserve marinade, broiling for the last few minutes, and making extra sauce. I used water and cornstarch to thicken the sauce. The sauce also works great with veggies. I made a separate batch with mushrooms, red peppers, and green beans. I love spicy so I added more chili garlic sauce.

Buffalo Chicken Wing Sauce

Seven Layer Tortilla Pie

I followed some of the other reviews and used chicken, jalapeños, and tomato sauce. I boiled some chicken quarters and added some oregano, cumin, bay leaf, garlic powder, onion powder, Goya, and crushed red pepper. One of the other reviewers used enchilada sauce, I took the recommendation and made by own with the canned tomato sauce, some of the chicken broth, Goya, and mixed it with the shredded chicken. I layered the tortillas with black beans, pepper jack cheese, sharp cheddar cheese, shredded chicken, jalapeños, salsa, a small amount of brown rice, and seasoned tomato sauce. I had enough chicken broth to freeze and use for another recipe. Thanks KDCG!

Chicken Stew with Dumplings

I've made this recipe for years, just now taking time to write a review. I first time I made it, it came out wonderful, better than I imagined. Everyone ate it up. I skipped the peas, added fresh thyme, used chicken breasts, wings, in addition the legs. I also left the bones in. It is also a great dish to bring anyone who is sick. I've had several requests to make it for various relatives. The best part was the dumplings on the top with the fresh parsley.

Spicy Eggplant

I made a few months ago, in the fall. I'm just now writing my review. I used chili sauce and added more fresh garlic than the recipe called for. I added some dried chili pepper, because I like spicy. I added some fresh green beans and it turned out wonderful. The only thing I had an issue with was the liquid. It seemed that the eggplant kept soaking up whatever liquid I added.

Vegan Split Pea Soup I

I followed some of the other reviewers and made the following adjustments; omitted the barley, as I did not have any, added some chopped ham and a bone, used about 10 cups of water, simmered on the stove for a few hours, and used only one potato. I actually had some leftover parsley, which I added, it gave the soup a wonderful flavor. Very good, next time I'll use Barley and omit the ham.

Butter Icing for Sugar Cookies

The recipe was pretty good. I added another tablespoon of milk and several tablespoons of powdered sugar to balance out the recipe. I used the frosting to make about four colors to decorate the Christmas Tree cookies, also on this site. The turned out delicious, melt in your mouth...

Grandma's Lemon Meringue Pie

My first attempt at lemon meringue. I read the review from CARTHECOOK, and skipped the zest. Like some of the other reviewers I increased the lemons to three. I made Emeril's Basic Pie Crust and baked two crusts for about 15 minutes. I doubled the recipe but whisked in more than 1/2 cup ( 1 cup doubled) of the hot sugar mixture. I put the meringue on top of the custard while it was still warm. I cooled the pie on the counter over an hour, but got over zealous and cut into one of the pies, before it was chilled. It was delicious but began to ooze. I then placed both pies into the refrig uncovered, after watching the related video, for the recommended three hours..

Squash Stuffed Chicken Breasts

This recipe was really good. So glad I found it. As I had all the ingredients or alternatives in stock. I happen to have some frozen organic butternut squash that I used instead of the acorn squash, a few mushrooms, red bell pepper instead of green, onions, and celery. I'm doing low carbs, so no flour or breadcrumbs. Also omitted the cheese. I didn't brown the chicken breast first. I pounded it thin, as another reader did. Seasoned it with salt, ground pepper, garlic powder, sage, and onion powder, sprayed some olive oil with the misto. Rolling the stuffing and baked for about 45 mins. It tastes like a healthy holiday!

Spicy Black Bean Soup

After reading the reviews. I made a few changes: 1) Used low-sodium chicken broth 2) Used Smoked Turkey neck instead of ham 3) Chopped Carrots not shredded 4) No bay leaf or ground mustard, didn't have any 5) Added salsa, extra cayenne pepper, jalapeno 6) used dried beans, didn't soak . It turned out very good. Thanks for the recipe.
