Awesome and Easy Creamy Corn Casserole

Great recipe! We love Corn just not canned corn. CHANGES: used frozen corn---steam bag then put it in an empty can for measuring. Used 2/3 of frozen tube southern style white sweet cream corn. Smothered 1/2 sweet vidallia onion and 1/3 red bell pepper in the butter ...added to mixture once cooled. Used Jiffy cornbread mix. Mixed the night before then refrigerated till morning. Baked the net day (am).

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

This was AMAZING! I had to OMIT the yellow bellpepper b/c for some reason i thought I read "yellow summer squash" so that was put in its place and it was divine. The dressing is really what makes this the BEST! SHRIMP: I doubled the dressing and threw about 1/2 cups worth over the shrimp before stir-frying. So the shrimp are nice and flavorful like the dressing.

Chicken Tortilla Soup V

This was a great recipe. I used Chipoltle Salsa and that was great! ALSO instead of chicken broth i had to use boullion. I happened to have Chicken Boullion and Chicken Chipoltle Boullion so that worked out well too! Awesome SOUP!!!

Almond Cranberry Squash Bake

Excellent! Easy way to get kids to eat squash. Actually did taste like a dessert. I did make a few adjustments before baking: **I added 2 T of sugar to the spice mixture before mixing it into the squash. ****I used chopped pecans because i didn't have almonds. :)

Good Dog Cookies

I can't say I loved them but My doggy sure did! I let them stay in the oven after I turned them off though because they were still somewhat "soft" they harden up well over night. Added handfull of chopped parsley and a jar of babyfood BEEF and babyfood carrots. --for nutrition.

Ham and Cheese Quiche

This was an amazing recipe! I used leftover Christmas HAM too. I just read the reviews, took a few suggestions then did what other reviewers did and tweaked it a little taking some of their suggestions: I used packaged frozen pie crust--prebaked 10 min; sauted the mushrooms in butter, used frozen spinach so I steamed it in the microwave and then squeezed out the excess water. I didn't have swiss so I lined the bottom of the crust with an "italian shredded cheese" blend, then sprinkled about 1/2 cup on top of quiche before baking. I also added 1/2 tsp. tarragon and 1/4 tsp freshly grated nutmeg and 1/4 tsp. freshly grated black pepper. WONDERFUL!!!! I served this for my family. My husband doesn't even like spinach and he loved this!

Special Creamed Corn

Made it today for our Christmas lunch. It was very good. I put finely minced sweet vidalia onion in it though. I also topped it with french fried onions since I didn't have any parmesean cheese. Family gobbled it up. I'll definitely use this recipe again.

Wow! This was great! I will definitely be making this more often. Not just around the HOLIDAYS! I toasted my pecans first before sprinkling them on the chocolate. I also used a 425 degree oven.

Jay's Signature Pizza Crust

This crust was absolutely delicious. I did brush the edges of the pizza with mixture of olive oil, salt, and Bruschetta seasoning. I've made many pizza crusts and this is the best one i've come across in quite awhile. I did have to manually add about a 1/2 cup of flour to the mixer but this may be due the the high humidity on the day i made the pizzas.

Alyson's Broccoli Salad

Used Tarragon Vinegar instead of White Wine vinegar and came out superb. Used maple flavored bacon as well. Substitute GOLDEN raisins rather than regular raisins. Due to the vinegar marinating on the broccoli...be aware of the strong odor of the lefovers....but very good!

AWESOME...DON'T SKIMP ON THE HEAVY CREAM.....ITS WORTH THE FAT!!!!! Seriously, i did substitute half and half once and they were still good but by no means should you sub milk in place of cream ever!!

Master Cookie Mix

I thought this recipe was great and easy. Mix the choc chips and butterschotch chips together evenly first before adding them to the mix. I used 2 cups regular shortening and 2 cups butter flavor. Using your hands is much easier and a very large mixng bowl is definitely required. Hint: After adding the 4 cups to each of your mason jars let them settle a little then divide the remaining mix evenly among all 6 jars. I used a printer to print the RECIPE on a label and placed the label on the side of the jar because last year many people lost the little paper I had attached with the directions.

Party Italian Wedding Soup

This was the first time I made Wedding Soup. I had tasted this soup only once in a coffee shop and had been dreaming of it since. I did make a few chages though. Like others I thought it needed more liquid so i added about 4 cups of water to the 48 ounces of broth. (Next time I'll just get an extra can) I only used one lg onion. I used italian bread crumbs in the meatballs. I also cooked the orzo separately so it wouldn't cause the beautiful clear broth to become cloudy. All in all I was very proud of this soup and my 12 year old ate spinach and loved it. :) May substitute KALE next time. T. LeBlanc
