Sean's Falafel and Cucumber Sauce

I love this recipe! It tastes so much better than any falafel i have ever had. I do like to change the recipe a bit, but the first time I made it to recipe and it was yummy as well. I use baking soda instead of baking powder, which makes your egg mixture grow a little but helps the falafel stay tender inside and crunchy on the outside when eating it. I also do not use the mayonnaise I just use more yogurt and I add tomatoes to the yogurt mixture.

Banana Muffins II

Yum! I love this muffins! I have made them with the recipe on this page, I have aded walnuts, I have made them with whole wheat flour or less sugar. No matter how I make them, they always come out tasty. It's a great recipe to follow or tweak. The only suggestion I have to make is that I prefer to have a vanilla flavor to my muffins, so I add a teaspoon of vanilla each time. Enjoy!

Caramelized Brussels Sprouts with Pistachios

I cut the larger brussel sprouts in half to ensure even cooking. It also gave them more flavor. This is so yummy!!! I can now say that I am a fan of brussels sprouts thanks to this recipe.

Cabbage Jambalaya

On of my favorite recipes that I have found on this site. Delicious! I made it to recipe with ground turkey/turkey sausage the first time, now I like to add 2 teaspoons of cajun seasoning to it and instead of celery I put in one green and one red bell pepper. I also like to use low sodium chicken broth instead of water. It is a great recipe the way it's listed, I just changed things to cater more to a flavor I enjoy more.

Crustless Pumpkin Pie

I love this pie. It needs more spice in it to make it 5 stars, but that's it. I made it for Thanksgiving and did one cup of sugar and 1 teaspoon of pumpkin spice seasoning. It was gone the day I made it even though there were 3 different types of pies. Everyone kept going back to the crustless pumpkin one. Highly recommended!

Healthy Banana Cookies

I am a sweet freak that is trying to eat healthier. I thought I would try these even those my husband did not want to try them at all. I followed the recipe exactly and the cookies came out delicious. Simple and tasty and even the stubborn husband came around and enjoyed them also.

Wilted Spinach with Cherries and Goat Cheese
