Buttermilk Pancakes II

This is almost exactly the recipe that I've been using for years from my standard Better Homes and Gardens cookbook. the only difference is that the BHG recipe calls for 6 T. of vegetable oil instead of butter. The butter makes it richer. I find that it helps to let the finished batter sit for 5 minutes (about how long it takes to heat my griddle) before cooking the pancakes. You can also add grated apples and cinnamon to the batter or blueberries or my kids' favorite: chocolate chips. Great, easy standard recipe. I'll never go back to using a store-bought mix again!

Overnight Apple Cinnamon French Toast

I added pecans with the brown sugar and butter and used Martin's cinnamon raisin bread. Very easy! My family scarfed it up!

Mom's Chicken Cacciatore

I used boneless chicken...two breasts and 5 thighs. I used two cans of tomatoes, one whole green pepper, and a half of a red bell peppler. Added a sprinkle of basil as well. I served it with quinoa instead of pasta or rice because we're always trying to find ways to add whole grains in. I also sprinkled some parmesan cheese on top like I would with spaghetti. I loved it, but one of my kids was kinda skeptical. Husband said it needed more flavor so next time I will give it a bit more salt (I used less than it called for) and maybe some crushed red pepper for some zing. All in all, I thought it was way yummy!

Easy Corn Pudding

My family loves this and its so easy to make! I serve next to tacos, burritos, or chili. Just wish it wasn't so high calorie.

Blueberry Crumb Muffins
