Chicken Enchiladas V
I've made this twice now, and LOVE it! I left out the chiles because my kids hate anything near spicy, and I used homemade cream of chicken soup and doubled the sauce, but otherwise followed the recipe. Next time I'll keep some sauce separate and warm it up because everything gets absorbed--it's absolutely delicious but we love having sauce with our food! Thanks for a great recipe--now I can have what I love about enchiladas without the kids complaining about the sauce!

Chicken Pot Pie IX
Loved this recipe! I did tweak it a bit based on what we have and our family's preferences. Doubled the recipe & made one pie with mushrooms instead of peas & carrots because my hubby hates peas and carrots cooked. The kids and I all loved the peas & carrots pie! I baked the chicken then sauteed it in butter. Also, I didn't have any chicken broth but did have a little vegetable broth, so I used that and mixed it with chicken boullion and boiling water to make up the difference. The gravy seemed bland (maybe because of my broth substitution) so I sprinkled in a little thyme, which helped. Next time I might make more sauce because it did get a little dry, but still delish! Thanks for the recipe!

Delicious Ham and Potato Soup
I love this soup! I have made it many times and it's always delicious! But I'm terribly slow in the kitchen, and it seems to take me forever to do the butter/flour/milk mixture (is it a rue?)! I wonder if I warmed the milk first if I could just pour it in all at once? I need a shortcut because I would make this soup more often if it didn't take so much of my time & energy!
